strawberry fruit and yogurt granola parfait

Dark Cloud 2: Witch Parfait

Hello everyone! Need something to perk you up? Make your mornings seem more special? Treat yourself to a Witch Parfait from Dark Clouds 2! This version is a decided breakfast-style parfait, in which yogurt is used instead of a rich cream, so you can enjoy it without the fuss of having to whip up the cream filling (especially early in the morning, because who wants to do that?).

~Ingredients~

  • 1 cup Yogurt (chocolate, or plain or vanilla if chocolate yogurt isn’t available)
  • Honey or Agave Nectar, to taste (if using plain yogurt)
  • 1 tbsp. Unsweetened Cocoa Powder (for plain or vanilla yogurt)
  • Granola or Oats, as needed
  • A mixture of the following fruits, as needed:
    • Strawberries
    • Raspberries
    • Blueberries
  • Cinnamon, to taste
  • Edible sparkles, for garnish

Prep Time: <15 min.

Makes: 1 parfait

~Instructions~

Step 1.) If using plain or vanilla yogurt, whisk cocoa powder and honey until thoroughly mixed. Use a rubber scraper to transfer the yogurt into a pastry bag or sandwich bag.

Step 2.) Cut a hole in the corner of the bag and squeeze about 1/3 of the yogurt into your serving cup. Layer your granola/oats, then your fruit.

Step 3.) Repeat the layers of yogurt, oats, and fruit, and then top off with the last 1/3 of the yogurt. Top with cinnamon and sprinkles to taste, and enjoy!

~Results~

It’s a magical way to start the morning! (sorry, couldn’t help myself XD )

OooOoOooH Okay anon let’s see what I can think of. Tomorrow I’m actually helping my dad write up an eating plan with meal and snack ideas so this will be fairly similar and helpful!

Breakfasts:

  • Bircher muesli or overnight oats
  • Oatmeal or porridge topped with fresh fruit
  • Acai bowl topped with granola or oats
  • Banana/berry ‘ice cream’
  • Wholegrain or rye toast with avocado and tomato or banana and peanut butter
  • Wholemeal bagel with jam and/or coyo
  • A huge green smoothie (i’ll make a recipe of my favourite if you’d like!)
  • Pancakes or french toast with strawberries and maple syrup
  • Weetbix with almond milk, bananas and grapes
  • Parfait with fresh blueberries, yogurt, muesli and stewed rhubarb
  • Almond butter on anything and everything
  • Half a watermelon (gr8 for a really hot day)

Lunches:

  • Big salads!!! Filled with spinach, lettuce, kale, tomatoes, cucumber, corn, chickpeas, beetroot, avocado, tofu, beans, pineapple, carrot and hummus.
  • Grilled panini with eggplant, zucchini, mushroom, pepper and pumpkin
  • Sandwiches, wraps or foccacias with any ingredients listed above
  • Bright, colourful raw tacos
  • Banana ice cream or smoothie
  • Sandwich with LSA butter and apple or banana slices
  • Roast pumpkin, spinach, pine nuts, chickpeas, walnuts and spinach

Dinners:

  • Veggie patty or tofu with asparagus and brown rice
  • Vegetable stir-fry with carrot, broccoli, water chestnuts, snow peas, capsicum, bamboo shoots, baby corn and cashews with a sweet chilli sauce
  • Homemade pizza with wholegrain pita bread, tomato paste, and any variety chopped vegetables + pineapple pieces
  • Mini pizzas on english muffins
  • Thick lentil soup or pumpkin soup with ground pepper on top and toasted sourdough bread
  • Chilli Con Carne or taco mix in lettuce cups

Snacks:

  • Yogurt and blueberries
  • Frozen grapes
  • Carrot and hummus
  • Apple slices with nut butter
  • Watermelon and coyo
  • Spinach and dip on crackers
  • Fruit salad/platter
  • Homemade trail mix
  • Air popped popcorn
  • Dark chocolate and strawberries
  • Cooked apple slices with cinnamon
  • Celery with peanut butter and sultanas
  • Veggie chips
  • Frozen yogurt with all the fruit in the world
  • Pikelets with coyo and strawberries
  • Dark chocolate and goji berries
  • Ryvitas with avocado and cherry tomatoes

Thinking of all these delicious ideas has made me very hungry! I might have to get out of bed and make a midnight snack/feast.

make ahead yogurt parfait

ingredients:

-1lb strawberries or cut up soft fruit (I buy berries on sale and freeze them for this, bananas are also cheap and good)

-1qt yogurt (I like nonfat Greek yogurt BC of the texture but its usually more expensive than normal yogurt)

-1 package granola (I can usually find this for $3 on sale, bulk is probable cheaper, or you could use nuts/cereal/another crunchy element)

Directions:

pour everything into a medium mixing bowl/tupperware container. Stir until combined. Stick it in the fridge and you have a nice filling breakfast for the week!
