Welcome to cooking with Eric and Stefan! Tonight’s dish is a homemade bison meat sandwich. Fresh ground bison meat, red onion, garlic, maitake mushrooms, and pepper jack cheese all from the farmer’s market. Paired with a delicious Dogfish Head Squall IPA, this meal is a keeper. If you like Dogfish Head’s 90 Minute IPA, the bottle conditioned Squall IPA is a must try.

I was in a Central Market in Washington and the person working there suggested this beer to me. Drinking it at home, the beer was actually very good (apparently the first batch). It hit lots of notes I was extremely impressed with. Consequently  I spent lots of time stalking shelves for the next release of this beer. When I finally tasted the second batch, I found it… lacking. I actually mentioned this to someone at a BA meet and they completely agreed with me, maybe I’m not crazy.
