Since becoming vegan, mushrooms have been a wonderfully fulfilling addition to my diet. Try this simple sandwich recipe with your favorite kind of mushrooms and greens!
I used the following:
2 Shiitake mushrooms sautéed with ½ chopped tomato over medium heat, seasoned with kelp (nice alternative to salt), garlic powder, and black pepper.
2 slices toasted Tuscan Pane bread.
½ avocado sliced and spread onto toast.
Spoonful of olive tapenade spread on top of avocado.
Topped with a handful of spicy spinach blend.

easy customizable omlette

omelettes are really great and pretty easy to make especially if you have the things on hand! i’d recommend at least one thing from each of the following categories: 

  • veggies. you can use frozen, pre-cooked, or fresh veggies. some ideas are: onions, carrots, pepper (sweet or spicy), spinach/leafy greens, mushrooms, peas, corn, asparagus, tomato, collards…
  • fats: pretty much any kind of cheese out there, avocado, and olives.
  • meat/protein: lunch meat,  hotdogs, ground beaf, (turkey) bacon, beans, and tofu. 
  • spices: salt, pepper, garlic powder, cumin, cilantro, chili flakes, any tasty pre-mixed seasoning, basil, oregano, and so much more. 
  • eggs! of course. for a single full meal, I’d recommend 2-3 eggs. if you want less cholesterol you can add just the egg white (3 eggs whites to replace 2 eggs). 

steps, pretty straightforward:

  1. if you’re using fresh veggies, cut them up and any meat/protein that also needs cutting. 
  2. put a frying pan on the stove with a little oil, and let it heat up for a minute or two. 
  3. dump your veggies + protein into the pan and cook until everything it hot all the way through. if you’re using raw veggies, give them a few more minutes to cook through. 
  4. turn your pan down to medium-low heat. get a cup/bowl and crack your eggs into it. whisk for a sec, then pour this over the pan (w/ the rest of the food still in it).
  5. sprinkle the pan with your spices and fats.
  6. let it cook until the eggs are no longer liquid/translucent. if the top is still a little runny that’s fine. also, if you notice the bottom of your eggs are getting dark in color, pop a lid on the pan to finish cooking. 
  7. put it onto a plate and enjoy! top with more salt, salsa, or hot sauce if desired. 

it’s really easy to make whatever size of this you want, and it also will keep well in the fridge for a few days.
