When the weather is getting chilly like now, there’s nothing better than this dish with a shot of soju for dinner. It warms you right up! This dish is full of everything tasty, big chunky juicy dark meat chicken, soft potatoes and deep, rich and spicy juice that tastes so yummy when eaten with rice. Soju is a korean liquor made with mainly potatos. It tastes somewhere between japanese sake and vodka. It’s used in Korean cooking a lot, especially in cooking meat. When heated with meat, the alcohol evaporates and takes away the gamey smell of the meat with it. So even if you are not into drinking this liquor, it’s good to keep a bottle for cooking purposes. And they are super cheap at Korean grocery shops, usually less then $7 a bottle.  It is the most popular drink in Korea and there are many different brands but most of them come in green bottles. You can use any brand for cooking. If you can’t find soju near you, no worries. You can substitute soju with sake or vodka. You can use many different types of chicken as long as it’s dark meat: bone-in chicken thighs, wings, and drumsticks…etc. Just make sure they are not too big, and you might need to cook them a bit longer in order for the chicken to cook through. I like to use boneless chicken thighs the best because they take less time to cook and also less messy to eat.

 The first meeting with him happened when you were five years old, your young jovial self building castles on the sand. Until they came crumbling down under the sole of someone’s shoe. You had looked up and were met with the devilish gaze of a boy with chubby cheeks looking down at you. It was only a matter of seconds before you were bawling, your tearstreaked face was a deep red and you were throwing handfuls of sand at the boy towering over you. That was enough for Donghyuck to start crying too and the whole situation suddenly had turned into a competition of who could cry the loudest. Up until his mother intervened and made Donghyuck apologize to you and help you rebuild your castle.

Kimchijjigae is probably #1 comfort food Koreans miss when they are living overseas. And most Korean people think their mother’s Kimchiijigae is the best, kind of like how Italian Americans think their mothers’ meatball or Lasagnia is the best. The main part of this super simple dish is Kimchi and depending on how old the KImchi is, the taste will differ dramatically. Months of fermentation will make the Kimchi leaves very soft and the juice will become almost effervescent which makes it heavenly when made into stews.

There are many variety in the protein content in this dish and the most beloved is the pork belly. But you can also use spam as I mentioned and also canned mackerel, saury or tuna. 

Kimchijjigae is generally quiet spicy, but you can make it even spicier by adding more chili flakes and fresh green chili pepper or jalapeno peppers. Fresh peppers give another layer of spiciness to this dish over the mellow fire of the aged kimchi.


Thai Tom Yum Soup 

I can’t take credit for this entire recipe. Tonight’s dinner was something quick and easy, but still so flavorful and delicious. Tom Yum soup is one of my most favorite soups, and tonight, I supplemented a canned broth that I buy from my favorite farmer’s market with lovely seasoned chicken breast [I wish I had shrimp on hand], sautéed onions and garlic, a few jalapeños, chili paste, and coconut milk. I finished the dish by adding some rice noodles I had on hand in the panty. Everything was garnished with fresh cilantro and devoured. The broth that I buy is heavily seasoned and so delicious that it was perfect and reminded me of the authentic soup I truly love.

You’ve just started working in a new area, in a new town, a suburban upper class city where everyone dresses up like Instagram models and food costs more than what you make in a week. But complaints aside, the new workplace was stressing you out so much that you return home every weekend, even if Sundays were your only day off.

A slender young man wearing a slightly rumpled fitted suit was seen sulking down the street, his companion had a bulkier build and was wearing the same. Both were tall and handsome, but the more muscular one was taller than the other and had black hair, while the other was platinum blond.  

“I am starving, let’s get something to eat” the sulking blond whined.

“You know, considering what you do, it really amazes me how quickly you regain your appetite” the dark haired man sighed, recalling the unpleasant task his companion just completed before they left.

“As if you don’t do this kind of stuff too. You’re no saint either He Tian ” he replied defensively, hunching his shoulders.

“I don’t do that kind of stuff, my job is to watch after you Jian Yi. Sure I have to pull a few moves to do that, but at least they can fight back” He Tian shrugged as he mumbled the last bit, not wanting to upset the blond too much, he knew that if he had a choice he would not be doing what he is. As they were walking he spotted a quaint looking little restaurant and paused once he was in front of it.

Jian Yi pouted and faced away, “It’s not as though I asked for any of this”.

He was well aware what he did would normally keep people up at night and it would not be wrong to say that usually one would lose their appetite after witnessing what he did.

He had not noticed his stopped companion and continued on walking for a few steps before turning around, raising a brow in question.

“Well, I thought you were hungry?” He Tian jerked his thumb in the direction of the restaurant, as if him standing in front of it was not enough of a hint.

Jian Yi shrugged and let his body guard hold the door open for him.

The restaurant was fairly small, and there appeared to only be one waiter on duty. It had an open kitchen and a long wooden bar with simple stools set up in front. Many of the stools were already filled, so the pair sat themselves at a table across from the bar instead.

He Tian took notice of the calm atmosphere of the restaurant, it was pretty quiet save for the sizzling of the food and the one other group sitting at the table nearest the doors. The people sitting at the bars must have come on their own seeing as there was at least one open seat in between each of them. It was still early morning so the rush had yet to begin, he suspected this small space would start to fill up in a few hours. There also appeared to only be one cook behind the counter, it may be a small restaurant but he wondered if another one joined him when it got busy.

The cook was actually quite eye catching, he was wearing a plain yellow t-shirt and had unusual red colored hair, his back was turned but if he had to guess his age he would say early 20s. He wondered how such a young man got himself his own restaurant.

As he gazed at the enticing cook a waiter finally walked up to their table, “Hello, welcome to The Mountain Fox . Here is your menu”

The waiter was a young man with spiky dirty blond hair and blue-grey eyes, he was probably the same height as Jian Yi. He had his sleeves rolled up to his elbow and the crisp white dress shirt fit snugly across his chest, suggesting a muscular build, but not as bulked up as the bodyguard.

“Thank you” He Tian politely replied. He glanced over at his unusually silent companion, his brows raised at the sight of Jian Yi staring slack jawed at the oblivious waiter.

After placing the menus and glasses of water on the table the waiter turned and left.


“Jian Yi?”

“Did you see him?”

“Who, the waiter? Yes I did, he is our waiter”

Jian Yi turned to He Tian, eyes wide and sparkling like a child who just got two king sized candies for halloween.

“He is?!”

He Tian rolled his eyes,“Yes, now what do you want to order?” he pushed Jian Yi’s menu closer to him and opened his own, “the sooner you do the sooner he can return to our table” he encouraged, amused with his companion’s obvious attraction to the admittedly handsome waiter.

Jian Yi snatched up the menu and He Tian returned to his own. Once he decided on his order he placed the menu on the table and found his eyes drawn back to the cook who was currently talking to their waiter.

Their eyes met for a moment and He Tian flashed him a radiant smile but was met with a displeased frown before the cook turned his gaze away.

Jian Yi had looked up just in time to watch the exchange. He smirked in amusement, He Tian was used to people liking him immediately, that smile he just gave was notorious for charming girls and guys alike. He hoped they would frequent this place in the future.

The waiter finally returned, pulling out a small notepad and pen from his waist apron, “Hi, are you ready to order?”

Jian Yi opted to hide behind his menu for the time being so He Tian decided to place his order, “Yes, I’ll take an extra spicy beef stew”

“Anything to drink?”

“No, I am fine with water”

The waiter looked over at the platinum blond expectedly, if he noticed the blushing, although it would be hard not to, he didn’t let it show.

“Uhhh, the same” Jian Yi squeaked, jumping a little in his seat.

“Water is fine?”


The waiter scribbled on his little notepad and made his way back to the counter. He didn’t make any move to give the order to the cook, they were sitting close enough that the redhead heard the order and started cooking as soon as the request left the customer’s mouth.



“You want to eat extra-spicy beef stew?” He Tian inquired, Jian Yi usually orders mild, spicy food makes his nose run.

“Shut up, I couldn’t think straight”

“No kidding” He Tian smirked suggestively.

Jian Yi scoffed and attempted to change the subject, “Oh yeah, I saw the guy behind the counter reject your signature winning smile”

“He didn’t reject it, he probably couldn’t see it clearly”

“We are, like, five feet away from him, he can probably hear us talking about him now”

They both whipped their head around at the same time when they realized Jian Yi was most likely correct in his assumption.

The waiter was sat at a stool and turned his head slightly, side eyeing the two in casual acknowledgement before resuming scrolling through his phone. The cook resolutely kept his back turned to the whole ordeal, instead concentrating on driving his knife through the vegetables. Aggressively.

“Oh shit” the two customers muttered.

They sat in awkward silence until the waiter came around with their orders.

“Two extra-spicy beef stews” the waiter set two large bowls down in front of the suited men who both said their thanks in a subdued manner.

He Tian felt his mouth water at the enticing smell of the steaming stew and brought a spoonful to his mouth.

“Whoa!” He Tian considers himself pretty good at handling spicy food, but this was really spicy, but so delicious. He was about to go in for another bite when his attention suddenly shifted to Jian Yi red faced and desperately chugging water in front of him.

“Hey, are you okay?” He Tian asked with concern, if this was spicy for himself, he didn’t know how Jian Yi had survived the first bite.

“M’fine” Jian Yi choked out, tears pooling in the corners of his eyes. Needless to say, he was not fine.

As if on cue the waiter returned holding another large bowl of beef stew.

“Here, it seems like that one might be too spicy”, he replaced the bowl in front of Jian Yi, “it’s on the house”

“What! No it’s fine, it tastes great!” Jian Yi exclaimed, embarrassment further reddening his cheeks as he tried to wipe away tears and snot.

He smiled slightly, “I’m sure it does, but it’s even better when you can taste it”

Jian Yi chuckled nervously, “Haha, probably”

Before the waiter could leave He Tian spoke up, “Hey, do you think I could get that one to go, I would hate to see such good food go to waste”

“Of course, I will go pack it up”

After the waiter left Jian Yi buried his face in his hands, “That was so embarrassing, kill me”

“You know I can’t, my job is to keep you alive if you’ve forgotten”

Jian Yi was about to retaliate when a phone began to ring. He Tian pulled out his phone and frowned at the screen before excusing himself to take the call outside. Jian yi didn’t even have to ask who it was to know his father was the one who called.

He took a bite of the new stew and was happy to find that it really did taste better when he wasn’t dying from the spice.

He Tian sat back down with a sigh, “We have to head back after this”

Jian Yi didn’t reply and took another bite of his stew, He Tian glanced at him one last time before working on his stew as well.

The atmosphere got noticeably heavier; neither one necessarily disliked their job, but their boss was a different matter. Jian Yi’s father was known to be demanding and cruel, and he made sure that Jian Yi had become desensitized from a much too early age. And he hates him for it. Despite this the mafia business is his future, and he couldn’t imagine belonging anywhere else.

They finished their meal and the handsome waiter came back with their check and the packed up stew. Jian Yi insisted to pay the bill, it’s not like it was really his money anyways. He Tian asked the waiter to send his regards to the cook for the delicious meal, saying this just loud enough for him to know the redhead to heared him say it as well.

They left quickly after that, Jian Yi had not said another word to the blue eyed waiter, his mood too dampened to do so.

He Tian considered lightening the mood by calling him out on it, but decided against it. They would have to get back to work soon-or more like Jian Yi would, He Tian is always on duty.


The Best Mother’s Day Ever

Today has been an amazing day. This has been such a relaxing and special Mother’s Day. I’m excited about Baby Nahri to come, my babies Kahim and Rahim wrote me a song. Hubby J said he recorded them in the studio so I can keep it forever (crying). 

It’s evening, Johnathan and I are just relaxing. He made me a spicy Korean stew (his mother’s recipe, it’s soooooooo good). We relaxed by the pool just talking and drinking. He then hands me an envelope. I look at him with a smile and he says “Open it”. So of course I do…..

When I open the envelope……..OMG *cries*

Johnathan: Baby, your Birthday is coming up this Saturday and I wanted to give you the best Birthday week ever. *Wipes my tears* You are an amazing mother and wife. I’m so honored to be your husband. 

Bambee: *Gives him a big hug and showers him with kisses* I love you so much, thank you thank you thank you *kisses him again*.

Inside the envelope are tickets to the Virgin Islands. He got the family a private plane and vacation home. We’ll be spending my BIRTHDAY week and  weekend in St. Croix. But what makes this so special I get to see my grand mommy. 


Shrimp and Vegetable Curry 

This is incredible! rich from the full fat coconut milk, just spicy enough from a blend of peppers and red curry, and hearty enough due to the chock-load of vegetables. It is easily made vegan/vegetarian by omitting the shrimp, and you won’t even miss it.


½ lb shrimp, peeled and deveined 

1 large crown of broccoli, cut into florets (fresh broccoli works best)

½ large yellow onion, diced 

3 cloves garlic, minced 

¼ lb asparagus, cut in half 

1 yellow pepper, chopped (or cut into strips) 

½ red pepper, chopped (or cut into strips) – keep consistent with yellow pepper 

2 cups chopped baby bella mushrooms

2 japanoes pepper (reconstituted/softened in boiling water and chopped) + more for garnish 

2 ½ tbsp red curry paste 

1 can (13.5 fl oz.) full fat coconut milk 

13.5 fl. oz vegetable broth 

½ tbsp ground ginger 

1 tsp sweet paprika

Few tbsp of sunflower or safflower oil 

Salt, pepper to taste

Cilantro, fresh jalapeño slices, fresh chili slices, and chopped cashews (not roasted), for garnish 


In a large, deep skillet or pot, heat a few tbsp of oil over medium high heat. 

Once hot, add in the onions, peppers, garlic, ginger, and salt. Cook for about 5-8 minutes so that the vegetables develop color. 

Once the onions are translucent, add in the broccoli, asparagus, and mushrooms. Cook for about 3 minutes. 

Add in red curry paste and stir generously. 

Add in the coconut milk and using the same can, fill with vegetable broth/stock and add. Stir and bring to a simmer. 

Once simmering, reduce the heat, cover with a lid, and let cook for about 15 minutes. 

Nearing the end of the 15 minute wait period, taste and season accordingly. Add in shrimp and cover once more, increasing the heat to a gentle boil.

If you prefer a thicker curry, add in about ½ tbsp of arrowroot starch, stir and let thicken while shrimp cooks. 

Remove the curry from the heat once the shrimp have cooked. 

Garnish with toppings and serve. 

Let cool before diving in – because this will be very hot.

Okay so I have a fair number of Tatooine foods / ingredients I’ve come up with. Here you go:


  • cadril chili: a very spicy and hearty stew, usually vegetarian, but meat can be added when it’s available
  • chinaka: a thick porridge, usually served plain, but with fruits and nuts added when people can afford them. It’s a sweet-spicy; the flavor is very similar to cardamom.
  • ralthin: a moderately spiced (by Tatooine standards) mixture of grains, legumes, vegetables, and dried fruit
  • tarmish: dumplings made of ansar root flour, filled with just about anything you can get your hands on, but usually ground vegetables or tubers and spice
  • tzai: a hot drink made from steeping a variety of spices (similar to chai), it’s important in a number of hospitality rituals. Each family has their own special tzai recipe, which they don’t share with outsiders.


  • amee: a low, thorny bush. The inner bark has a sweet-spicy flavor, similar to cinnamon
  • ansar root: an edible tuber, essentially the Tatooine version of a potato
  • cadril pepper: an extremely spicy pepper, very common in Tatooine dishes
  • chinaa: the seeds of this plant are crushed into a spice very similar to cardamom
  • dal: the root of this plant is often used in tzai. It tastes much like sarsaparilla
  • ginsu: a squat, straggly bush. The strongly flavored bark and roots have a bitter, astringent taste, and are used as a painkiller and also added to food. The Skywalkers use it in their tzai blend.
  • kaktru: a small, bulbous cactus. The flowers are often used in food and especially in tzai.
  • laara: the seeds taste similar to cloves, and are used commonly as both a flavoring for food and an ingredient in tzai.
  • pikot: a warm, spicy root similar to ginger.

That’s my working list so far, but feel free to add to it!

    “Hey, Jay,” you said, giving him a quick hug as he walked over before you went back to stirring the pot of spicy chicken stew. “How was your day?”

    “Good,” he said. “We’re practicing some new stages for a music festival in Busan for a couple weeks, so that’s fun.”

    “Oh, sweet!” you said. “Does it have to do with your new album and stuff?”

    “Yeah,” he said. “It feels good to do some new stuff.”

    “I bet,” you said, smiling tiredly at him.

    “How about you?” he asked. “How was work?”

    “Okay,” you said. “Same old.”

    “Mm,” he said. “Thanks for cooking! This looks great.”

    “Sure,” you said.

    As you dug into your dinner fifteen minutes later, Jay said, “Babe… You’re never this quiet, what’s wrong?”

    “I… I don’t really want to talk about it,” you said. You’d been hoping he wouldn’t notice, but of course he did…

    “But I’m worried about you,” he said earnestly, but you wouldn’t meet his eyes.

    “Can you just… leave me alone?” you asked.
