Homemade Cinnamon Spiced Granola

1 cup nuts (I used almonds and pecans)

roughly chopped and roasted until golden without oil

1 cup spelt flakes
1 cup popped amaranth

Roast in 2 tbsp of coconut oil for a few minutes, then add

1 tsp cinnamon
1 pinch of salt
and the nuts, mix well and add
3 tbsp of maple syrup

Let the mix caramelise for 30 seconds, then turn off the heat and spread the granola on a baking tray to cool down

Add 3 tbsp of chopped flaxseed and 5 chopped dried figs - or anything you like ;)

Haven’t made mug pancakes in a long time, forgot the recipe, but made a beautiful one.

1 scoop cellucor cake batter protein
¼ cup egg whites
¼ cup Greek yogurt
½ cup spelt flakes
Splash of almond milk to mix.

Microwave, take out of cup, flip into container and microwave some more so everything cooks!

Packs 40g of protein and 285 cal 😍
Topped it with maple syrup (of course).

Why spelt is so great?

Spelt is a non-hybrid distant relative to present day wheat. Spelt’s uniqueness is derived from its genetic makeup and nutrition profile.

Spelt is by nature a wholefood. Unlike wheat, where vital nutritional bran and germ are usually removed during milling, the vital substances of spelt are found in the inner kernel of the grain.

These complex carbohydrates are an important factor in blood clotting and stimulating the body’s immune system. Spelt is a suberb fiber resource.

Spelt granola

I made a spelt granola  :) 

It’s a substantial healthy sweets ! 

Spelt granola 

makes 20 squares


3 cup spelt flakes

50g pumpkin seeds

50g sunflower seed

50g dried organic cranberry

2/3 cup maple syrup

2 TBSP peanuts butter 

  1. Preheat oven 160C. Place flake on the baking tray, bake for 25min, stirring every 5 min. 
  2. Place the roasted flake, seeds and dried cranberry in a bowl. 
  3. Place maple syrup and peanuts butter in a small pan and bring to the boil. Reduce heat to low and simmer 12 min or until thick.
  4. Pour over flake mixture and mix thoroughly. 
  5. Place mixture in a lightly oiled baking dish. Cool 1 to 2 min. 
  6. Press mix firmly into the dish by lightly moisten fingers.
  7. Let cool for 30 min. Slice into squares or bars
