Worlds of Flavor: World Casual ~ The Future of American Menus (Opening Night)
It is an understatement to say that I love the Worlds of Flavor Conference at the Culinary Institute of America - Greystone in St. Helena, CA. I mean come on… the conference takes place every fall in the Napa Valley and features some of the most revered chefs in the world and a plethora of food and libations. This year was no exception. Opening night at the Worlds of Flavor is always very exciting and flavorful. Some of my favorite tastings were from Spanish chef, Dani Garcia who offered Egg without Egg which was an egg shell filled with lychee jelly and other layers of flavor.
The Turkish contingent led by the dashing Musa Dagdaviren was fantastic. I’d have to say that there was a tie for my favorite dish. I loved the simple, clean flavors of Chef Charles Phan’s Vietnamese Halibut Vermicelli with Pineapple Anchovy Sauce. Chef Phan has the Slanted Door in San Francisco which is one of my favorite restaurants in the world. But Le Cirque executive chef Craig Hopson represented Australian Lamb with a Lasagnette of Australian Lamb and Napa Valley Vegetables. It was truly the most beautiful and one of the most delicious dishes of the evening. Keep in mind that this is just the first of three eating marathons. There is more to come and stretch pants on my horizon.
