snow peas and carrots with soy sauce maple syrup and sesame seeds

                                         ~Soba noodle salad~

Ingredients 

Soba noodles (100% buckwheat for gluten free)

Fresh veggies (any selection of crunchy veggies)

  • carrot
  • snow peas
  • green beans
  • bok choy
  • cherry tomatoes
  • avocado 
  • broccoli
  • capsicum

Coriander- roughly chopped ( and I would have used basil if I had any)

Firm tofu

Sesame seeds 

Dressing (mix according to taste and quantity)

  • coconut oil (not much)
  • sesame oil 
  • tahini
  • peanut butter
  • soy sauce 
  • small amount of brown sugar/maple syrup 
  • chili (i used dried but I think fresh would be better)
  • lime juice 

Method

  1. Place noodles in boiling water and cook according to instructions
  2. Finely slice all veggies 
  3. Cut tofu into cubes and fry in coconut oil until just crispy on each side. Remove from heat and flavour with soy sauce and spices
  4. Mix up ingredients for the dressing
  5. Lightly steam broccoli and bok choy (I just put them in the pan with the hot tofu and covered with a lid for a few min)
  6. Drain and rinse noodles in cold water then add all ingredients and dressing into a bowl and mix (i used my hands to get it all through)
  7. Top with sesame seeds and avocado
