I’m so excited I finally got my first set of coconut bowls!
CASHEW BOWL
In a high speed blender blend:
½ cup spinach
1 carrot
1 pack frozen acai
1 cup frozen peaches
1 banana
1 cup cashew milk

TOP WITH:

I am trying to be healthier, but I have issues with textures which can make getting five a day difficult. Also, I often skip breakfast because I find it difficult to eat right after waking up, and sometimes skip lunch too, which leads to carb loading and a sluggish metabolism. 

So, I’m experimenting with smoothies. Today I made a chocolate and avocado smoothie as the first experiment. It is surprisingly good. I might add a little cold brewed coffee or vanilla next time as the cocoa taste is very strong. I also thought about adding nut butter, but decided to try it just as a basic smoothie before playing with it. I could probably also add maybe some spinach or other veg that will be hidden by the strength of the cocoa.

Summer Smoothies – Double Delights

Today is a very special day so I am giving you a double treat. Today is a day of celebration and what better way to celebrate that with TWO smoothie recipes. I have been making some great progress throughout this month. At the start of the month I told myself that I wanted to kick it up a notch. I have been doing just that.

I have been putting in that work in the gym. I have been posting pictures like crazy over on my Instagram account and getting great feedback from my wonderful followers. During the day, I all dolled up but when its time to hit the weights and cardio, I get down and DIRTY. I have kicked up my workout to 45 minutes of weights and an hour of cardio blast 3 times a week. Most weeks I have had the pleasure of adding an additional hour of gym time, lucky me.

It is really starting to pay off and show. I am lighter on my feet, I don’t struggle through my classes any more, and best of all my clothes are squeezing the life out of me. This being the most important part. A long time ago someone told me that the worst thing you could do to yourself is buy bigger clothes. Back them I really didn’t fully understand what that meant. But I 100% get it now. If I would have run out and got a bigger size shirt or a bigger size pants, I would have been comfortable with the weight I was gaining and wouldn’t have made the effort to drop the weight.

By keeping my clothes and feeling that squeeze, it gave me the push that I needed to get my butt in the gym and make the changes needed. I’m not going to lie and say that every day was a breeze because it definitely wasn’t. Truthfully most day I just wanted to stay home and watch TV. I am self professed binge watcher and I love it. But my shirt coking the mess out of me and my pants being too tight was just want I needed to remind me that I had some serious work to do.

Let me tell you, that work has PAID OFF. Some days I just want to skip down the street if feel so light on my feel LOL. The best way to celebrate is to indulge in some healthy goodies. So, I give you the Peach Sunrise Smoothie and Toasted Coconut Coffee Smoothies. ENJOY!!!

Peach Sunrise Smoothie

¾ cup frozen raspberries

1 cup almond milk

1tsp vanilla extract

1 tbsp. lemon juice

1 tbsp. maple syrup

1 peach chopped

1 cup of orange juice

In a blender, mix the raspberries, almond milk, vanilla extract and lemon until its nice and smoother (you can add a little more milk if you need to make it a little thinner). Add in the maple syrup and blend a little more. Pour into two glasses (it should fill up the glasses half way). Clean out the blender and add the peaches and orange juice and blend until smooth. Pour the peach orange juice mix to the two glasses of the raspberry mix. This will naturally create the cool marbled sunrise effect. Then just ENJOY!!!

Toasted Coconut Coffee Smoothie

¼ cup sweetened coconut flakes (have extra for garnish)

1 cup of canned coconut milk

½ cup coffee, frozen into ice cubes

1 banana, frozen (slice before freezing)

2 tbsp. ground flaxseed

1 tea vanilla extract

Toast the coconut in a pan until they are fragrant and golden brown. Add the toasted coconut, milk, coffee cubes, frozen banana, flax seeds and vanilla extract to a blender and blend until smooth. Pour in a glass and garnish with extra coconut flakes. ENJOY!!!

Favourite smoothie recipe?

Bananas, LOTS of peanut butter, a dash of cacao powder, shredded coconut, a dew dates, some ice and coconut milk; topped with crushed peanuts and cacao nibs. It is my absolute favourite combination, I honestly drink it all of the time!
