First layer | beetroot chia pudding:
½ cup plain almond milk
¼ medium beetroot, peeled and roughly chopped
1 tbsp chia seeds
Blend together milk and beetroot. Pour into a bowl and whisk chia seeds in. Refrigerate overnight.
Second layer | blend together:
½ large carrot, peeled and roughly chopped
Third layer | blend together:
1 cup pineapple
½ cup mango
½ tsp turmeric
squeeze of lemon juice
I put both layers into the freezer for about 20 minutes to thicken.
Divide each layer into 2 glasses, layering on top of one another. Garnished with lemon and blood orange slices, passionfruit and added mint.
