I only want 3 pies this year. What should I pick?

Willfully proud of this pie. Notes:

— Butter fleck size, ranging from crumble to bead, felt like the right distribution.

— Wrapped rim of the crust in tin foil about ¾ of the way through baking. Successfully prevented burning.

— Left baking stone in the oven. Mostly for better, but I made the mistake of putting the pan directly on it. Fear is that the lower crust will not be of significant crispness. Also, first time baking a pie in a glass pan. Not sure what the deal with that is.

— Also, might have left the filling hanging out in the bottom crust for too long before baking. Steeling my pride for the floppy mush that it might be.

— Bothered to find Meyer lemons this time around. This is a Shaker lemon pie, you see, and apparently Meyers are preferable to its cause.

— Can’t dimple a crust for shit. I am good with hands when their need is to move in broad strokes. My arm muscles are nimble and talented, my palm is swift and precise. My fingers are idiots.

— Had no coarse sugar for the topping, so had to use light brown sugar. It burned rather prettily, I’d say.

— Excellent blistering.
