ROSEMARY CIDER CARAMEL APPLE GALETTE.

I woke up Monday morning with a sinking feeling in my stomach, the same kind of near-vomit I feel after I get into a terrible fight with someone I love, a fight where we both got a little unhinged and said things we didn’t mean at all. Things we never would’ve said had we been in our right minds. Except I didn’t get into a fight with anyone Sunday night. Sunday night I listened to the United States’ presidential candidates claw at one another in debate with a ferocity that felt nothing short of eerie.

First of all, let me get this out of the way: I’m staunchly #WithHer. #ImWithHer for a million reasons under the sun, and for one very critical reason: She is the only sane human in the race. Which brings me to my current state of pit-stomached confusion. At what should be a seminal point in US history, the election cycle presents us with only two choices: Sanity or insanity. And, of course, this American-as-apple-pie rosemary cider caramel galette.

But I’m no political ideologue. Here’s what I am: A living, breathing, pussy-owning cis-gendered heterosexual white female citizen of the United States who believes in equality, freedom, and safety for all. Read more and get the recipe here.

Vegan Apple Cinnamon Coffee Cake

Can you feel it? I can! Autumn! Autumn is right around the corner! The temps are beginning to drop a tinge, it’s getting darker earlier, and I just saw a boat full of pumpkins at the market!

I bake all year, but Autumn brings a barrage of recipes that truly bring us the magical Autumn experience.

Apples, cinnamon, and pumpkin are just a few of the ingredients I think of when I plan my Autumn baking.  

This coffee cake recipe is one to “fall” for that’s for sure! I plan on making this cake numerous times this Autumn.

Ingredients for batter:

6 T vegan butter, room temperature
1 ¼ cups organic whole wheat pastry flour
1 ½ t organic cinnamon
1 ¼ t non-gmo, non-aluminum baking powder
½ t sea salt
¼ t baking soda
2/3 cup organic Sucanat
2 organic flaxseed eggs
½ cup organic coconut milk
1 large organic apple, peeled and chopped into ½ inch pieces

Ingredients for glaze:

3 T organic pure cane sugar
3 T water
¼ cup vegan cream cheese

Method:

Pre-heat oven to 350 degrees.  Line an 8x8" baking pan with unbleached parchment paper.

In a large bowl, whisk together the flour, cinnamon, baking powder, salt, and baking soda. Set-aside.

Using a stand mixer, cream together the Sucanat and butter until fluffy.  Add the 2 flaxseed eggs, mix until fully incorporated.  Alternate adding the flour mixture and the coconut milk.  Stir in apples by hand.

Pour batter into the lined baking pan.  Bake 25 minutes or until the cake pulls away from the sides of the pan.

While the cake is baking start the glaze.

In a small saucepan, combine the sugar and water.  Stir until the sugar dissolves.  Remove from heat and let cool.

Place cream cheese in a medium bowl and beat until smooth and fluffy using a hand mixer.  Add the cooled sugar mixture and continue beating until you get a smooth glaze.

When the cake is completely cooled, pour glaze in long diagonal ribbons.

Next, cut yourself a slice, pour yourself a cup of coffee. Sit by a window and start looking for falling leaves.

What a month it has been. My hosting server was hacked. My hosting account shut down (thrice!). My phone died. My computer faced its own set of confusion and woes. Any self-respecting California girl would throw up her hands, call it Mercury retrograde, and spend the rest of the day cuddling with crystals. Alas, Mercury is not retrograde and I happen to prefer my astrology not at all. (I knowwww! I used to be a yoga teacher and errythang! What happened to me?! That’s a story for another time.)

Because now, at the end of a week that was all about time learning it’s ok—like REALLY ok—to ask for help, I decided to throw up my hands and make these gorgeous little mini tarts.

They won’t remove malware on your hacked hosting account, they don’t know how to reboot the software on your sick little iPhone, and they damn well haven’t got a clue as to how to fix the enduring problem of race and class in America (listen to this, if you haven’t already), but they do have a way of soothing a ravaged soul.

LOTRO Meal #1

I feel like my obsession with crock pot cooking is showing. Honestly, if I had known how easy it actually was to just throw things into the crock pot and then take out yummy deliciousness hours later, I wouldn’t have been so scared to use it until now. IT’S A BRAVE NEW WORLD FOR MEEEEEE.

Even though summer still has a ways to go yet, I woke up the other day with this feeling. I call it the “Fall Feeling”. I always get into this state when the fall is starting, when things are starting to change and harvests and red brown yellow asldfkjasl;dkfj. Why is it happening now? I don’t know, my brain really wants Fall to be a thing I guess. Anyway, it makes me think of all things Middle Earth so I switched out another recipe I was going to do for this meal because reasons.

Tonight we are dining on Seasoned Beef with Cauliflower, Cream of Carrot Soup, and Strawberry Dessert Wine. Just a few adjustments that were made: Because I am surrounded by large men-type roommates with big appetites, I added some red potatoes to the crock pot. As I will note below this is completely optional, and I just wanted to point out why you might be seeing them in some of the pictures. Also, since wine can take a few months to make, I had to improvise a bit on the dessert wine, but it should still do the trick! Serving sizes are based on if you are making the entire meal. 

I hope you’re hungry, because we’re about to have a hobbit style dinner.
