Mum: what toppings do you like on pizza?

Me: Oh…pepperoni, mushrooms, olives, sausage, beef, sometimes garlic…

Stepfather: That’s the toppings on the “cowboy” pizza from the take-and-bake place!

Me: That…was a list of options, not a recipe.

I’m beginning to think the true pizza controversy isn’t pineapple lovers vs pineapple haters, but “one or two topping” versus “casserole with a pizza crust”.

Matching Bentos for the Bottomless Pit and I!

-Salad
-Sausage
- Sauteed black pepper king oyster mushrooms
- Potato salad with shirasu (small white fish)
- Umeboshi
- Iron egg ( from taiwan)
- Marinated bonito cubes

Iron Eggs (铁蛋)are my favourite Taiwanese snack (because I can’t bring taiwan sausage, yam balls, and bubble tea through customs), and they go very well with rice or rice porridge!

ONE POT SAUSAGE & MUSHROOM PASTA


Ingredients: 

  • 2 Tbsp olive oil
  • 2-3 links Italian sausage
  • 2 cloves garlic
  • 1 small onion 
  • 8 oz. button mushrooms 
  • 1 (28oz.) can crushed tomatoes
  • 1 tsp dried basil 
  • 1 tsp dried oregano 
  • 4 cups vegetable broth 
  • 1 lb. rigatoni 
  • ¼ cup parmesan 
  • handful fresh parsley (optional) 

Directions:

  1. Add the olive oil and sausage links to a large pot and cook over medium heat until they are browned on the outside and firm enough to slice into rounds. Remove the sausage from the pot with tongs, slice into rounds, then return them to the pot and cook for a few minutes more, or until fully browned.
  2. While the sausage is cooking, slice or mince the garlic and slice or dice the onion (depending on how big you want your pieces). Slice the mushrooms.
  3. Once the sausage is browned, add the crushed tomatoes, onion, garlic, mushrooms, basil, and oregano to the pot. Stir to combine and to dissolve any browned bits off the bottom of the pot.
  4. Add the vegetable broth and pasta, then stir to combine. Place a lid on the pot, turn the heat up to high, and bring it to a rapid boil. As soon as it reaches a full boil, give it a stir, replace the lid, turn the heat down to low. Let the pot simmer on low for 15 minutes. Stir it every five minutes or so while it’s simmering. Make sure it’s simmering (bubbling) the whole time. If it is not, turn the heat up slightly.
  5. After 15 minutes of simmering, the pasta should be tender and most of the liquid should be absorbed. If there is still too much liquid, let it simmer without a lid for a couple more minutes. Stir in the parmesan and top with fresh chopped parsley, if desired.

I got a bike! It was 60% off and I get free tune-ups for life. 

The real reason for this post though is to tell you that this man does more for me than anyone has ever done. Like Sunday, he drove all the way up to me (45 minutes) just so we could go on a quick bike ride before I had to work. 

We only did 10k since a storm was rolling in, but that was more than enough to make my muscles and butt question what I was doing! 

He has also been making most dinners lately since I’m back to teaching and basically running around like a chicken with my head cut off. Tuesday was the first day with students and although it wasn’t bad, it also wasn’t good. I have a couple students who are going to make this year particularly challenging and I definitely ended up crying on Tuesday night. He was so supportive though and yesterday when I went over, he cooked up a feast for us since I had to work then, too. He bought fancy olives and a relatively healthy spinach artichoke dip (yes, he checked the label!) with pita chips for an appetizer, and then made chicken sausage with sauteed mushrooms, grilled romaine salads, and a Greek bread thing for dinner. 

This morning when I went to leave for work, he had my iced coffee ready to go with an Rx bar on top of it because he knows I love them. 

I think I’ll keep him. Also, can we please notice that I’m wearing shorts, and spandex bike shorts at that IN PUBLIC. I hate shorts.

I have health issues that mean I can't eat diary or meat and I'm going to college next year, so I'm trying to figure out what sorts of things I could eat without having to spend a ton of money

Hey! It really depends on what you like and what’s cheap in your area. Most colleges will have you on a meal plan for your first year, is that the case for you? If so. most dining halls these days have vegan options, and you won’t have to worry about spending money or cooking for yourself.

If not, try to make food in batches and refrigerate or freeze what you can’t eat for leftovers! The cheapest vegan foods off the top of my head are:

  • dry beans and lentils
  • dry rice
  • tortillas
  • potatoes
  • dry pasta
  • canned tomatoes, tomato sauce, corn, or peas
  • frozen veggies
  • sometimes tofu or tempeh depending on where you are!

My go-to recipes are things that I know I can make easily that taste good, to me. These include:

  • grilled tortillas with hummus (my version of a quesadilla)
  • rice or quinoa and lentils cooked in the same pot, seasoned with veggie broth, paprika, cumin, chili powder, and turmeric
  • pan fried tofu with any kind of seasonings I feel like
  • sauteed “bacon style” tempeh with spices and maple syrup
  • Asian style tempeh or tofu with rice vinegar and soy sauce
  • black bean and sweet potato mix with veggies
  • whole wheat pasta with tomatoes and vegan sausage, with greens and mushrooms
  • overnight oats with frozen berries
  • avocado toast with hummus
  • mini microwave cakes
  • tofu scramble with beans and veggies
  • pre-made frozen vegan burritos
