Teaching the kids that you can eat healthy even when you’re away at university!! Sliced red and yellow tomatoes, baby cucumber, shredded zucchini, sliced red onions, yellow peppers, a dollop of store bought hummus, heated store bought falafel drizzled with tahini dressing (recipe on the blog) and balsamic glaze. Serve it with soft tortillas and you have yourself a great lunch/dinner!
