Bánh mì for you! Day 3 of sandwich week takes on the Vietnamesebánh mì sandwich. The recipe is mostly based on another Whole Living idea but with some extra kick inspired by this epicurious recipe. Sandwiches were also served with some delightful utz sweet potato chips. 

2 12oz containers of tofu, pressed then sliced into strips

½ English cucumber, 2 carrots, ½ Korean radish, chopped in matchsticks

Marinade/Sandwich Dressing: ½ cup rice vinegar, 4 tbsp soy sauce, 4 tsp ginger, 2 tbsp brown sugar, ¼ red onion, 2 tsp Sriracha

Sprigs of Cilantro

2 french baguettes

Sriracha to taste

So the recipe above is loosely based on the one the whole living one I mentioned, most alterations were made only out of convenience and not any huge statement against fish sauce or whatever else I didn’t have nearby, so feel free to try either. I think this came out pretty good and was plenty for the 4 of us.  

For the tofu, I pressed it first for 20 minutes, a new skill for me; then sliced and marinated for 30 minutes; pan fried hard to get some good grill on it. The carrots and radish I left in vinegar with some salt overnight. I assembled the sandwiches in the morning, using leftover marinade to brush on the bread then adding the tofu, carrots, radishes, cucumber and cilantro and bringing the sriracha to be added to taste.
