Resources for Sea Magic

Someone asked for some resources on sea magic, but I accidentally answered it publicly instead of privately, as requested. Sorry ><

So I deleted the ask and the username, and am just posting it publicly anyway.

I have a tag for [“sea magic”] and one as well for [“water magic”] - anything I have will be in there. The practices, while similar, obviously have a different focus that can take the impact and how it is worked in different directions. Sea magic is a very specific branch of water magic that is well known and often practiced.

Here are a few resources on sea magic, not including spells or I’d be here forever- this is all just informational stuff about sea magic.

I found my old list of resources on sea magic [here], but oh gods, it really needed updating - I mean, just look at the format!

Bealtaine Recipies

Breakfast Ideas -

Irish Porridge with Berry Compote -

(from Irish Cooking by Publications International Ltd.)

This recipe is great with whatever berries are in season near you. I like to use the honey instead of sugar to represent the fruits of our labor as well as the honey the bees make after pollinated the food. Its a very sun representative food to me as well.

Ingredients -

  • 4 cups plus 1 TBLS divided
  • ½ teaspoon salt
  • 1 cup steel-cut oats
  • ½ tsp cinnamon
  • ½ tsp ground nutmeg
  • 1/3 cup half and half ( or cream or dairy substitute)
  • ¼ cup of brown sugar or molasses
  • 1 cup fresh strawberries hulled and quartered
  • 6 oz fresh blueberries
  • 6 oz fresh blackberries
  • 3 tsp granulated sugar or honey

Steps

  1. Boil the water with a pinch of salt, then sprinkle in the oats and cinnamon and nutmeg as its boiling. Stir until it begins to thicken, then reduce to simmer for 35-40 min. Add in the cream/non-dairy and molasses/brown sugar.
  2. Combine berries and water in small sauce pan, add in sugar or molasses. Bring to a simmer on medium heat. Cook 8 - 9 min or until tender and the berries still hold their shape.
  3. Decide porridge among 4 bowls and top with the berry compote.

Honey Scones -

Sounds delicious and from the same book as above. Great for Imbolc as well.

Ingredients -

  • 2 cups all-purpose flour
  • 2 TBLS brown sugar (packed)
  • 1 TBLS baking powder
  • 6 TBLS butter, melted
  • ½ cup old fashioned oats
  • 1 TBLS granulated sugar
  • ½ tsp salt
  • ¼ cup whipping cream
  • ¼ cup milk
  • 1 egg
  1. 1. Preheat oven to 425 degrees. While heating line the baking sheet with parchment paper.
  2. 2. Combine flour, brown sugar, granulated sugar, baking powder, and salt. Stir in the oats. Whisk the milk, cream, melted butter and egg in a separate bowl. Stir wet ingredients into dry until the dough just comes together.
  3. Turn dough onto a floured surface and pat dough into a ¾ in thick circle. Cut the circle into eight triangles.
  4. Arrange triangles onto the baking sheet and bake for 12 - 15 min or until golden brown. Let cool 15 and serve warm, with butter and honey.

Feast Dishes -

Sides -

Here are some side dishes that I thought up or read for your feast. These will be in less recipe format then the ones above.

Savory Strawberry Salad -

Ingredients

  • ½ purple onion
  • 1 container strawberries, rinsed and sliced into ¼ inch slices
  • 6 - 8 roma tomatoes sliced into ¼ inch slices
  • 2 TBLS balsamic vinegar
  • salt to taste
  1. Slice onions into ¼ inch quarter rings. Add to a non-reactive bowl. Add the strawberries and tomatoes.
  2. Add balsamic vinegar and a pinch of salt.
  3. Place into the fridge overnight, or the freezer for 1 hour.
  4. Remove the bowl and let come to room temperature. Serve.

Spring Salad Mix -

Add a fresh made dressing to a bag of salad mix!

Try these -

  • honey, lime, oilive oil and dill
  • raspberries, balsamic vinegar, olive oil and salt and pepper
  • rice wine vinegar, cilantro, lime, and canola oil
  • lemon, dijon mustard, clove of garlic, olive oil, salt and pepper

Simple Sides -

  • Irish Cheddar and fresh fruit
  • Colcannon
  • Fire Roasted Corn on the cob
  • Fire Roasted Bell Peppers dipped into a creamy dressing (Ranch)
  • Carrots and Celery dipped into hummus
  • Local fresh produce, raw and ready to eat!
  • Red cabbage and sliced apple slaw

Main Course -

  • The main dish should be something that reflects the season, and your celebration. If you are having a bon fire, hot dogs, sausages and other food roasted over the fire are appropriate.
  • Or fire up the barbecue and grill up some some meat! Carne asada, which is a popular summer meat to grill in SoCal, it is marinated strip steak in lime and other seasonings, and great for this holiday. Also try lime and tequila marinated chicken, grilled salmon, or hamburgers.
  • Not going to be outside? Try roasting or broiling in the oven. A good beef roast is great, or maybe some broiled fish.
  • Vegatarian? try boca burgers, or other veggie burgers, grilled portabellos with cheese on top, or some seasonal veggies on the grill! I love roasted zucchini on the barbecue or in the broiler.
  • Do what is good to you and appropriate for your diet/nutritional needs and what is in season. Just because the ancient Irish folk ate something at this holiday, it doesn’t mean we can’t eat what we have available or even the modern equivalent of it!

Drinks -

  • Gewurztraminer with Elderberry Syrup and fresh strawberries and blackberries
  • May Wine - ½ cup of dried sweet woodruff leaves, 1 bottle of Riesling wine, 1 bottle of Sekt (German sparkling wine) or champagne, ¾ cups organic strawberries, chopped. And a pinch of fresh sweet woodruff flowers for garnish
  • Meyer Lemonade infused with lavender and mint
  • Fresh brewed floral tea, such as chamomile, with honey or infused 3 flower sugar, from my other post.

Desserts - I am going to make a whole separate post for Bealtaine desserts!

I hope you enjoyed my post on the foods and recipes I put together for this year’s Beltane!

Meal Planning Week of 4-9-17

The name of the game this week is to not fuss over food too much. I feel like that has been the trend lately anyway, but since I’m leaving Friday morning I want to make sure I only make a perfect amount of food so I’m not wasteful and leaving stuff in the fridge.

Breakfast: I’m doing some eggs and veggie sausages. I picked swiss chard out as a green because it just looks so, so pretty. I have some deli-made bruschetta again as I really love topping my eggs with it. I think the fresh note will be great with the sausages and sweated greens, too!

Lunches: I’m pretty sure you’re sick of it, but ha–just going to do my tofu salad sandwiches. There is absolutely zero reason for me to experiment and rock the boat this week so I’m just making this once again. I know I’ll happily eat it. I really never tire of it! Had to pick up tofu, avocados (had a coupon, YAS), pickles, and deli mustard. I already have the wine vinegar, salt, pepper, and oregano at home.

I’m serving that with spinach-mint soup. This soup is always really good to me, and ridiculously good for me! I had to pick up spinach, onion, garlic, mint, coconut milk, and stock. At home, I already have celery, olive oil, salt, and pepper.

Dinner: The piece de resistance for this week is turkey taco bowls with cauliflower rice and salsa. The salsa is pretty quick and easy. I usually do this with fresh tomatoes in summer, but store tomatoes are still depression this time of year so I picked up diced tomatoes. I also picked up garlic, cilantro, red onion, and jalapenos. At home, I already have salt, limes, and lemons.

The taco part of the bowl will use ground turkey, which I already have at home in the freezer. The package in the cart is for my fiance’s turkey burgers we make for his packed lunches. He’s weird about using the frozen Costco turkey. I won’t fight him on that. It’s not like I’m short on my own neuroticisms!

I had to pick up carrot, red onion, red + green bell pepper, jalapenos, and chili powder. At home, I already have cumin, paprika, cayenne, salt, pepper, apple cider vinegar, and cornstarch. Then I’m just going to take that head of cauliflower and rice it.

Snacks: Strawberries, bananas, chia seed pudding, protein shakes. Once again, just have to grab the fruit!

After coupons and bottle returns, the cart was $54. Very pleased!

anonymous asked:

can u plz give me some nesta/rhys brotp headcanons?? like them teaming up on the inner circle during cards and winning every single time? or cassian and feyre giving each other confused looks every time they laugh about their inside jokes? or how the cassian/feyre brotp and the rhys/nesta brotp are always super competitive? like pictionary and charades?? or how rhys and nesta are super cultured and love to talk about their favorite plays/musicals they see? PLZ I NEED MORE OF THIS BROTP

YES FRIEND. WE ALL NEED MORE OF THIS BROTP I ADORE IT. I think there’s this idea that Nesta hates Rhys and I’m like…my dudes. ACOMAF happened. There was character development. It was beautiful. Please take note of it and the ‘that was why you painted stars on your drawer’ moment.

Also I just feel like Nesta and Rhys are….Actually quite similar?? I think there’s a kind of…cool pragmatism in both of them (see: ‘I’m going to starve myself and my sisters to see if my father will actually get off his ass and do something’ and Rhys’s…entire UtM persona) And they’re both quite…regal for want of a better word, they both have powerful mental capacities (Rhys’ daemati magic and Nesta’s ability to resist glamours) they’re both quite cerebral in general too. For all that we get talk of Rhys’ power most of his planning revolves around schemes, cunning, manipulation, stealth that sort of thing, it’s never about brute force, Nesta thinks similarly. It’s calculated and careful and listen what I am driving at here is Nesta and Rhys sitting up late sharing some spiced wine and talking battle tactics/war strategies I’M DOWN FOR THIS.

right, okay, headcanons now that piece of…unnecessary mini meta is over:

Yes to them teaming up against the others at cards. Like there’s that part of ACOMAF where Rhys gets all huffy because Cassian and Azriel tag-teamed him when they were playing cards? So he invites Nesta to the next game and they…wipe the board with them and Cass and Az are like….okay so we’re screwed and Nesta is very smirky and pleased with herself.

DEFINITELY YES TO THE INSIDE JOKES THAT BAFFLE FEYRE AND CASS THIS IS ADORABLE. and it is 100% guaranteed to be some completely nerdy joke about history that even Amren doesn’t get (and she was there) But I will get to the history nerds thing in a minute.

Nesta and Rhys teaming up against Cass and Feyre would be…Amazing. And like, Nesta and Rhys are ruthlessly competitive and Feyre and Cass are too but while Feyre is ruthlessly competitive Cassian is just like…determined competitive. And basically the big golden hearted bat gets surrounded by all of these vicious bastards who just want to win and will do anything to achieve that and he’s like !?!?! no pls calm down let’s enjoy the snacks I brought okay? He and Feyre do work very, very well together and hot damn is that girl determined and scrappy but most of the time they’re no match for Nesta and Rhys who will just….destroy you then elegantly sip wine over the dust that was once your corpse.

CHeSs GAmES Rhys being a broody and dramatic bat with the weight of the world on his shoulders and Nesta knows it. Mor and Cass have both tried teasing him and coaxing him into letting go with them and Az has tried quietly talking to him and Feyre has tried too but she knows to just leave him be for a little while but Nesta…is having none of that broody bullshit. She settles herself down opposite him and whips out a chess board and like….Rhys cannot resist it. He just can’t. Nesta makes one move and it’s like he manages to hold out for a whole two minutes before he snaps and swivels round in his chair to face her properly and within ten minutes he’s completely and utterly engrossed and Nesta is just smirking and looking very pleased with herself.

YES TO THEM BEING CULTURED TOGETHER!!!!!!!!!!! And their partners will go the plays/shows with them but they just don’t ~understand~ (I think Cass is typically…..baffled and Feyre appreciates like musical performances but she’s not as big on theatre or plays or the ballet shows Nesta loves and she doesn’t understand the technical aspects as much?) So they start going together instead and then they go to dinner together afterwards and they talk about it for ages and I think….If you get Nesta talking about something that she loves and is invested in and knows a lot about she. will. not. shut. up. She gets all animated and almost…gushes sometimes and Rhys can be similar in that he just intensely talks about this thing and nothing else and basically on these dinners neither of them really notice what they’re eating and they get home after like six hours and Cass and Feyre are ??? and they’re like ‘what I was only away for like an hour what is wrong?’

On the subject of intense talks Feyre definitely ambles into the kitchen at like…two o’clock in the morning because she couldn’t sleep and needed some tea…and to discover the mysterious disappearance of her heat source- uh, mate. As she gets nearer she hears the sounds of soft but very intense and irritated arguing and she recognises Rhys’ voice and Nesta’s and she just sighs because she really thought they were getting on better. Then she actually arrives in the kitchen and realises the two of them are sitting there furiously arguing over the most recent book they’ve read (Nesta and Rhys are part of a book group. It contains two people: Nesta and Rhys. They’re very happy with this arrangement) and Feyre just…smiles a little because at least they’re getting on…and have found someone to channel all of this into.

HISTORY NERDS. (Amren joins in on this sometimes too but other times she just can’t be bothered at which point she palms Rhys off on Nesta) Listen Nesta would be a total history dork okay, she loooves researching it and I feel like one day she’s just sort of @ Rhys ‘you, you’re old, come here, I have questions.’ Rhys is baffled initially but then completely and utterly delighted when he realises that she wants to talk about history. (I can totally see Nesta writing an account of the war once it’s over btw. And maybe she interviews Rhys and the others about the first war too because I don’t care if you’re immortal you need to write these things down.

SCHEMERS IN CHIEF. I just need someone…to use that beautiful brain inside Nesta’s beautiful head okay. Like. The girl is a low-key genius EXPLOIT THIS PLEASE. She and Cass totally plan battle strategy but she and Rhys just do general strategy, war strategy, how to get the other high lords to co-operate, the terms of treaties, exploiting loopholes and closing loopholes and politics. (I don’t think either of them have any patience for more sort of ‘social politics’ and making nice and all that - that’s Elain’s area of expertise) but cunning manipulative courts relations every day politics they’re both like yep we’ve got this. Rhys listening to Nesta and Nesta being a little alarmed because no man has ever taken into account what she thought or had to say before - especially not on these kinds of subjects. But she shares what she has to say and Rhys listens and this is….a novelty. Because someone has found value in her, in her ideas, in her attention to details, in the way her mind works, in all the things that were suppressed in the mortal realm because no, no, ladies don’t need to worry about this sort of thing or were belittled as idle hobbies now they’re important. Now they’re instrumental in the war. Now she is instrumental in the war. And not because she’s made fae and forced herself into the clothes of a warrior but because she’s her. And Rhys can use that. Also, like, if these two start plotting against you you should just…like just move okay? Just leave the country and go somewhere far faaar away it’s…so much easier.

Also, like, I know we all want Nesta queen of the female Illyrians and standing up to all the camp lords and training them to fight and all that but…consider: Cassian and Mor, now with Feyre in tow, get sorted on teaching the Illyrian females how to fight and training them and all that jazz. But one day Nesta goes to Rhys like ‘okay, but what about just teaching them? What about their education?’ Because not every girl is a warrior and even the ones that are deserve to be properly educated and that is what Nesta is here for. And just…Cass in charge of the girls’ training and then Nesta in charge of their education makes…a beautiful little pair.

Rhys helping Nesta to control whatever magic she has because he knows what it feels like, having a power you were never equipped to have boiling away inside you, feeling like it might tear you apart, might drive you mad…He helps her channel and hone her magic, helps her to control it instead of the other way around. He helps her to control her emotions as well (though Cass does most of that, Rhys helps)

Nesta and Rhys (grudgingly) at formal events and parties together and they spend…..the entire time sipping wine and salting those they have issues with/don’t like (ie….everyone) and looking fabulous while they do it. (they bond so much over salt and mutual dislike of people it’s amazing)

Rhys going to Nesta for advice about Feyre!! Maybe they have an argument or a fight about something and Feyre is…Difficult to read and throws up all of her walls and he doesn’t know how to get through to her and is despairing. Nesta is…Not best pleased that he upset Feyre but…she does admit they’re good for each other and she does know Feyre better than most. She gives him some terse but welcome advice, helps him understand Feyre’s reactions and how best to approach her.

Nesta going to Rhys about Cassian. Before they’re mated she tentatively asks him what a mating bond is like, what it feels like, why the heck anyone actually wants one (she’s not too sure how she feels about someone with a direct connection to her able to feel things that she does. Her mind is her sanctuary and she doesn’t much care for the idea of someone else being able to rifle through it whenever they feel like it) Rhys explains it for her, carefully explains what an honour it is to find a mate, that it’s a rare and cherished thing…but one that’s her choice, and her mate’s. Rhys sussing out that Nesta and Cass are mates before pretty much anyone else and he helps talk to Nesta who can’t understand why this happened or why fate or the damn Cauldron or whatever else would do this to Cassian and leave him stuck with her. Rhys calms her down and talks to her about it, because mother knows he understands what it’s like to feel like you’re not worthy of your mate - and he still struggles with that sometimes, he admits to her, but it’s worth it.

I feel like these two would actually talk to each other about their shit (not all of it) but…On quiet evenings when they’re just sipping wine and have exhausted all the history/book/play discussion sometimes little things slip out. Nothing too personal but I think Rhys would tell her about his issues with running the court and the pressures on him as High Lord which he never fully feels he can share with his Circle because…well they’re part of his court, he has to keep them safe too and it can be a bit lonely and isolating sometimes. Feyre helps, obviously, and he talks to her about sort of day to day problems but just the general pressure of responsibility in general he talks to Nesta about. And she maybe opens up a little about her worries of not quite belonging anywhere and Rhys can understand that and just. They have little heart-to-hearts sometimes - the little things that they can’t quite tell anyone else/don’t know where else to put them.

Just. RHYS AND NESTA OKAY. I LIVE FOR THIS.

Garden Ward

Here is a very basic breakdown of my garden wards as they are currently being set. I won’t got too in depth because they will be active wards and I just don’t feel comfortable sharing details like that on wards I’m using.

Materials:

🌱Nails or Railroad spikes
🌱Red Yarn
🌱A guardian (I’ll break this down)
🌱A flat surface that is water proof
🌱Suitable offerings (not food)

Process:

🌑 Personally I’m waiting to set this up during a new moon but the choice for moon phase is up to you. Typically I don’t incorporate moon phases into a lot of my craft but I was specifically instructed to do so, so I will. Each New Moon will serve as a reminder to clean up, clear off, weed, and straighten up.

🌑 I have a small ceremony in mind for the spikes to prep beforehand. My own charging and cleansing stuff, pretty standard.

Some suggestions:
- A specific chant, song, or inscription
- Coat them in something like salt, wine, herbs, crystals, blood, spit, urine… The list goes on. (Do not drive salt into the earth you will kill your plants).
-Charge in the sea, in the woods, under your bed, in the sun/moon, in fire…
-Take them on a hike around your property and expose them to local spirits (I’d do this if you have a pre-existing relationship only).

🌑 After prep ceremony it’s time to drive these guys into the earth. My garden is rectangular so my “fence” is going to be rectangular. Drive each spike into the earth at each corner, I’ll do it moving counter clockwise because I want to break a cycle and put a new one in place.

🌑 String being tied around will follow in the same manner. I’ll say some words here and all that but how you alter this is up to you.

🌑 Once this is done I’ll feed The Guardian* and ask for their protection.

🌑 Lastly set up the flat surface for offerings. I will offer offerings both daily and weekly. Water when watering will be offered daily and then something else once a week. If you offer food do NOT leave it out. Welcoming pests with food while warding your garden is counter productive.

🌑 If you feel so inclined you can spend some time in the garden as well. Personal energy definitely won’t hurt magic like this.

🐸 The Guardian 🐸
Many years ago I was gifted a frog statue and a birdbath by a friend. I figured this gift would be a perfect vessel for a Garden Guardian. Frogs eat bugs, keep wetlands clean and healthy and also blend well in their surroundings.

My Guardian lives in the birdbath. Every season they get the first harvest and I leave them offerings as I feel I should. From water, flowers, sweets, fertile soil to pretty stones and trinkets.

In return I ask they watch over the garden and keep my crops safe from pests.

I’ve never had any issues with any pests outdoors under their watchful eye until the raccoons this year.

There is a process on welcoming a spirit into the vessel to act as a guardian but that is for another time.

The First Celebrity Chef and the First Cookbook

Today our media is filled with the exploits of celebrity chefs such as Gordon Ramsay, Bobby Flay, Anthony Bourdain,  Emeril Lagasse, Rachael Ray, and many, many more.  The history of celebrity chefs goes way back in history, even thousands of years to the world of Ancient Rome.  One of the first celebrity chefs was a man named Marcus Gavius Apicius, a gourmet who seemed to be a popular man in the Roman world.

A lover of food and luxury, Apicius was certainly in good company as many of his friends and acquaintances were the richest and most powerful people in the Roman Empire, including famous Romans such as Sejanus, Drusus, Seneca, Maecenus (adviser to emperor Augustus),  Junius Blaesus and Lucius Antistius Vetus (Roman Consuls), and of course the Emperor Tiberius.

In the first century AD Apicius made another contribution to culinary history, one of the first cookbooks ever published. Called De re coquinaria (on the subject of cooking,) it was written in the early 1st century AD and features 10 chapters on housekeeping, ground meats, vegetables, ingredients, soups, poultry, pastries and baking, red meat, and seafood.  While Apicius was not the direct author of the book, the cooking styles and recipes contained within are attributed to him.  Interestingly De re coquinaria  was not written in Classical Latin but in Vulgar Latin (commoners speech), demonstrating that it was to be used as a common kitchen tool.  Despite this, De re coquinaria clearly was a manuscript of gourmet foods consumed by the wealthy, as it uses rare ingredients such as goose liver, flamingo tongue, and dormice (edible mouse).  Over time several translations and editions were printed.  Today modern English translations of De re coquinaria can be easily found on Amazon and other book sites.

A Recipe by Apicius: Pullus Fusilus (Stuffed Chicken)

Ingredients

1        fresh chicken (approx. 1-1.5kg)

300g     minced meat (half beef, half pork)

100g     oats

2        eggs

250ml    white wine

1 tblsp  oil

1 tblsp  Lovage (can substitute with celery leaves)

¼ tsp  ground ginger

¼ tsp  ground pepper

1 tsp    green peppercorns

50g      pine nuts

Liquamen (white wine and salt) or salt to taste

Instructions

Ground pepper, lovage, ginger, minced meat and cooked oats. Add eggs and mix until you have a smooth mass. Season with Liquamen, add  oil , whole peppercorns and pine nuts. Fill this dough into the chicken. Cook approximately 1 hour at 220 deg C in the oven.

9 Ritual Items Commonly Found at the Dollar Store

1. Herbs and Spices. The spice section is great for picking up herbs and spices that can be used in sachets, incense blends, and mojo bags.

2. Sea Salt. Sometimes it’s coarse, and sometimes it’s finely ground. Either way, there is usually some kind of bulk salt available for circle-casting and whatnot.

3. Candles. Tea candles, pillar candles, jar candles. They have them all. Personally, I prefer the unscented white ones, which are great all-purpose candles for carving symbols in and anointing with various oils. They are generally much cheaper at the dollar store than almost anywhere else.

4. Seasonal decor. I usually make a trip before any given Cross Quarter holiday for altar decorations.

5. Incense. Truth be told, I am not a big fan of dollar store incense. If I’m burning it indoors, I find it’s worth it to pay extra for higher quality incense. However, if you’re burning it outdoors, I think the cheaper stuff is fine, as it dissipates quickly anyway.

6. Glass jars. If you’re into herbalism, you know that you can never have enough glass jars, which are ideal for storing herbs, tinctures, salves and brews. Plastic tends to break down and contaminate these items.

7. Spring water. For cleansing rituals and whatnot.

8. Small bowls, dishes and trays. To put on the altar for offerings, spring water, salt and oils.

9. Wine Glasses. I mean chalices. I have seen some lovely, very expensive pewter and metallic chalices, but honestly, a lot of them just look overly ornate, too ceremonial and sometimes downright gaudy. A simple wine glass is often more elegant. If you really want to dress it up, you can wrap the stem with silk ribbons or twine, glue seashells to the base or tie charms to them.

What I ate today: grilled salmon, canned black beans (seasoned with garlic powder, oregano, red wine vinegar, salt and black pepper), beetroots and mashed potatoes. I don’t know why people complain that eating healthy is boring… I actually quite enjoy simple healthy meals like these! :)

Georgia’s winemaking heritage goes back 8,000 years and centers on the qvevri, a cavernous terra-cotta pot shaped like an egg, lined with beeswax and buried to the mouth underground. But these ancient vessels were sidelined by the industrial wine production dictated by seven decades of Soviet rule. Over the past 10 years, however, qvevri wine has slowly recovered. Today, it is a calling card for Georgian wine around the world.

House Hlaalu pumpkin risotto

Happy Friday! Here’s a new recipe sooner than you expected!

House Hlaalu are one of the greatest influential houses in Morrowind and Vvardenfell. It’s no surprise then, that their personal chefs have much experience and knowledge in the art of fine cuisine. This recipe is rich and warm, perfect for Raven Rock nights when you’re tired of ash yams!

You will need:
1 ½ cups Arborio rice
1 cup pumpkin, mashed
3 cups vegetable stock
½ cup grated mozzarella cheese
½ cup grated parmesan cheese
3 cloves garlic, finely chopped
1 brown onion, chopped
Olive oil
Dry Italian herb mix
1 tsp paprika powder
20g butter
½ cup white wine
Salt and pepper, to taste

Method:
Cook the onions and garlic in olive oil until glazed and brown. Transfer to a large saucepan and add the stock and butter.

Add rice and boil while stirring continuously. When rice is al dente, add the wine, herbs, paprika powder, and pumpkin. Be sure to keep stirring to prevent the risotto from sticking to the bottom of the pan.

Continue to cook until the risotto has reached a soft, glutinous consistency (about 20 minutes). Stir in the cheeses until they are evenly spread and melted.

Serve in a deep plate and garnish with more herbs and cheese if you like.

Meal Plan Week of 4-30-17

This week I’ve created a meal plan that’s more inexpensive than our normal fare. We’re not shit broke, but I always like to use my pantry and sale page on full force when we have made an expenditure lately to absorb a little of the cost. I cannot not think like this. Also, it totally wasn’t intentional but my meal plan turned out vegan this week. I remember the other week I mentioned something about challenging myself to make a breakfast without eggs and yeah–doing that.

As per usual, purchases from the store are bolded. Everything else is currently in my fridge, pantry, or freezer.

Breakfast: This week I’m making a “tofu cream cheese on toast w/ a summer veggie hash.” I have a package of firm tofu still in the fridge. WHEN WILL IT DIE? To give it that cream cheese tang I’ll be using fresh lemon and apple cider vinegar. Obviously, salt and garlic are musts, but I also couldn’t resist picking up some green onions to give it more of that pungency many flavored types of cream cheeses have. I’m going to spread it on some oatmeal bread and top it with some tomato slices. I cannot wait to try!

The summer veggie hash will consist of Tofurky Italian sausages, zucchini, summer squash, onion, garlic, mushrooms, and bell pepper. I’ll flavor that up with salt, pepper, and some dried spices. Probably give it a small drink of wine, too!

Lunch:  I’m making a new soup! Zucchini and summer squash were on sale so I decided why not do the double feature? I’m making a “summer squash bisque” and with that, I’m making “lentil meatballs.” To round out the flavors on the soup we have onion, garlic, and celery. I picked up coconut milk and vegetable stock for liquids. I have some white wine, salt, and black pepper for more seasoning. I think it’s funny that I don’t drink but love cooking with alcohol.

All I needed to pick up for the lentil meatballs were dried lentils, oats, and parsley. The rest I have at home; seasonings (see how lazy I’m getting) and chia seeds (gonna make the egg with these).

Dinner: I’m going so basic-bitch here. I’m making spaghetti. I know, so much Italian lately. My fiance and I are usually making so much Southwest and Middle East that we’re kind of “dude, Italian–dude.” I’m still using the edamame noodles, and I know you guys don’t need to hear more about these damn noodles.

I call my sauce “taste the rainbow” spaghetti sauce because I tend to make my spaghetti sauce a contestant on “what can I put the spinach in?” among other vegetables that are not commonly put into pasta sauce.

Picked up crushed tomatoes, tomato paste, onion, and bell pepper. Already have carrots, celery, spinach, red wine, table sugar, salt, pepper, basil, oregano, and marjoram

Snacks: Bananas, protein shakes, chia seed pudding

Total after coupons and store rewards was $50.11

Fresh Linguine & Scallops

This recipe is decadent in all of the right places. I did not write a recipe for this, and it came together in a breeze (less than 20 minutes). Here’s just a glimpse of what I did:

Ingredients: FRESH pasta – do not use boxed pasta for this recipe. It wouldn’t do it justice. Fresh sea scallops. Bacon. Grape tomatoes. Fresh parsley. Minced garlic. Lemon zest. Lemon juice. Butter. Chardonnay wine. Salt and pepper. Red pepper flakes if you’re feeling fancy.

Directions: Bring a few cups of water to a boil and salt generously. Toss in fresh pasta and cook until al dente. It is important to note the fresh pasta cooks quickly and will take about 3 minutes, max. Drain pasta and set aside. In a skillet over medium high heat, heat a few tbsp of olive. Clean and dry scallops thoroughly – season with salt and pepper. Place the scallop seasoned side down, season the other side and cook for no more than 2 minutes a side. Overcooking a scallop will cause it to develop a rubbery texture, and they will be ruined. It is not only a waste of time, but a waste of money because scallops are on the pricey side. Once the scallops are seared, remove them to a clean plate. In the same skillet, add a few more tbsp of olive oil and add the chopped bacon, cooking it thoroughly. When the bacon is almost done cooking, add in the minced garlic. Reduce the heat so that the garlic does not burn. Depending on how many servings you are making, you will need anywhere from 2-5 tbsp of unsalted butter. Melt the butter into the bacon and garlic and stir. Deglaze the pan with your choice of white wine (I love Chardonnay) and cook to reduce the alcohol. Add in grape tomatoes, the zest from one lemon and juice from ½ lemon. Taste your sauce and adjust the flavors accordingly. Toss in fresh herbs. Add in the pasta and the scallops and warm throughout. Serve and top with the cheese of your choice (I used shaved parmesan) and fresh herbs.

Enjoy with a fantastic glass of wine and some crusty bread!
