Rotelle and Cheese with Ham


500 grams rotelle/ruote pasta

1/3 cup butter

4 cups milk

3 cups grated gruyere cheese

½ teaspoon salt

½ teaspoon white pepper

small pinch of nutmeg

1 cup cooked ham, diced small


Pre-cook rotelle pasta to al dente. Strain then add a tablespoon of oil onto the pasta to keep it from sticking together. Set aside.

In a large sauce pan, melt butter. Add milk, once the milk is heated (do not boil as it will curdle) add the grated cheese. When the cheese is melted season with salt, white pepper and a small pinch of nutmeg (makes a huge difference flavor-wise). Add the diced cooked ham. And finally, add the rotelle pasta, stir gently into the sauce and heat pasta through for 5 minutes. Serve warm.
