- Wednesdays off (even though I have to work Saturday)
- Quiet time to think and reflect in the morning on my day off

Here’s my Black Forest Açaï Bowl! With some of my fave choc granola around, some cacao nibs for crunch and deliciously creamy PB (just look at it!) 😍

VEGAN MINT CHIP SMOOTHIE.
Good morning, sweet ones. I stopped and started this post several times, because each time I began, I found myself writing something darker than the time before. My heart has been heavy. Heavy with Nice. Heavy with the United States. Heavy with Turkey. Heavy. One day I let myself sink deep into it, curl down into the sadness, and only emerge to paint my nails sparkly blue. It was the best I could do in that moment, and it was most certainly not enough. 

My father and I have been exchanging phone calls about all of the murders, the killings, the coups. Our talks often have long pockets of silence in them, heart openings so big neither of us have anything to say to fill them. We murmur things like just awful, can you believe, horrifying. And at the end of each call, we willingly attempt to dull our minds into submission, forgetting. Because that willing forgetfulness seems to be the only way to move forward.

Yesterday, though, I got a voicemail from my father that said something different.

Quinoa Coconut-Cacao Bar Melt together: 6 Tbsp coconut oil 2 Tbsp coconut butter 4 heaping Tbsp of raw cacao powder (or regular unsweetened cocoa powder will do, if you don’t have cacao) 2 Tbsp of maple syrup pinch of salt Stir in 1 cup Puffed Quinoa Cereal ¼ cup Cranberries ¼ cup pistachios Pour into a lined loaf pan and chill until set.

:: walnuts + dates + oats + raw cacao powder + sunflower seeds + chia seeds + maple syrup + coconut oil + cinnamon + himalayan salt :: 

one of these lil balls fills me up with so much nourishing goodness & immediately my cravings for chocolate or sugar simply fade away… they are raw vegan :) just blend it altogether & roll them into balls! in joy! ~*~

Coco-Cacao Energy Truffles                            
Power up your afternoon with these scrummy treats.  These babies are nut free. Great on the go energy boosting snack!                                

Ingredients:
1 cup of gluten free rolled oats
1 cup puffed rice
¼ cup seeds (flaxseeds, pepitas and sunflower kernals)
¼ cup shredded coconut (set some extra aside)
½ cup sultanas
½ cup dried cranberries
¼ cup cacao nibs
1 tablespoon coconut butter
1 tablespoon agave or maple syrup
2 drops vanilla essence

Method:

Blend until smooth. Using hands, form balls and coat in shredded coconut.  

Tip: These can be kept in the fridge or the freezer in an airtight container, or wrapped individually in aluminium foil as a quick take away snack.  

APRICOT-CACAO SMOOTHIE BOWL

Smooth, creamy, chocolaty, fruity deliciousness for an anytime of the day energy boost

Ingredients:
1 small ripe avocado
2 apricots
1 tbsp raw cacao powder
1 tbsp cacao nibs
1 tbsp ground flaxseeds
1 tbsp coconut nectar, agave syrup (or sweetener of choice)
1 cup of non dairy milk (rice, almond or coconut milk)

Method:
Blend ingredients until smooth. Top with slices of avocado and cacao nibs. Edible flowers optional.

Raw vegan salted caramel slice 👌

Biscuit layer:
• dates
•crushed mixed nuts
•coconut oil
•maple syrup

Caramel layer:
• 2 cups dates
•cup of soaked cashews
•half cup coconut oil
•pinch sea salt
• half cup maple syrup

Chocolate layer:
•half cup cacao powder
• half cup cacao butter
• 2 teaspoon coconut oil
• optional tablespoon coconut sugar
