I hope you answer this i know you get so many messages but I was just curious what my boyfriend could bring to work for lunch he's transitioning to veganism and I need some ideas! thankyou lovely.

That’s so nice of you to think of him and help him with lunch ideas. I promise you there are plenty of super easy and delicious things! I don’t know where he works, what kind of storing/heating facilities they have or what his personal preferences are so I’ll just tell you a few different options :)

  • Veggie burger or veggie pattie and salad
  • Felafel wrap with hummus and veggies
  • Pumpkin/sweet potato/lentil/mixed vegetable soup
  • Spaghetti with a tomato based sauce
  • Gnocchi, fettuccine, cannelloni, penne, etc
  • Vegetable/tofu/tempeh stir-fry
  • Vegetarian paella
  • Rainbow pad thai
  • Raw tacos
  • Burrito or mexican salad
  • Black bean nachos
  • Sushi
  • Tofu quiche
  • Rice paper rolls
  • Green curry soba noodles
  • Easy peanut butter sandwiches!

Spicy Raw Mushroom Burritos!
I had mentioned wanting to incorporate more variety into my raw vegan lifestyle the other day.. and well, this is the result!! I totally stand by my statement that everyone should try at least one new veggie and fruit every week! There are SO many lively seasonal vegetables and fruits on this earth that will protect our bodies from sickness and disease. I introduced five new veggies to my line-up in this one meal!!! 

Spicy Mushroom
3.2 oz maitake mushrooms, ¼ lemon, few thyme springs (de-stemmed), 1-2 tsp raw coconut aminos, 1-2 garlic cloves, chopped green onion, handful of raisins dash red chili flakes. Chop up mushrooms and marinate in the remaining ingredients. Stirring occasionally while you prep your other veggies.

Dipping Sauce
Red bell peppers, carrots, red onion, 2/3 cup sun dried tomatoes, 2-4 tbsp nutritional yeast, ¼-½ cup water, 2 medjool dates. Blend all sauce ingredients.

Collard Wraps
4-5 Collard Greens (de-stemmed) Shred, julienne and/or chop your favorite veggies. I used carrots, red onion, broccoli sprouts, red bell peppers, cabbage. To make burritos, lay collard green flat and line up veggie fillings and top with spicy mushroom mixture. Roll up as you would a normal burrito, dip in sauce and enjoy!!! 

Recently started culinary school and (ironically), I’ve had very little time to actually make real meals for myself! Most of my time has been spent in class, studying, and volunteering at Three Square, the local food bank in Vegas. Since I’m always short on time, nori burritos have become one of my go-to snacks because they’re super quick to make and fun to eat!

Raw Nori “Burrito” (makes 2)

2 raw/untoasted nori sheets

½ avocado, sliced

Sea salt, to taste

Cayenne pepper, to taste

2 handfuls of shredded carrots

½ red pepper, thinly sliced

Optional: Low sodium Tamari, for dipping

Lay out your nori sheets and add all the ingredients into the center of the sheet. I was lacking on red pepper slices in this photo, but I usually add about 4-5 slices per burrito. Then fold in two of the corners and roll up your burrito! (Don’t go overboard on the filling or it won’t roll up). I like to dip mine in Tamari with a little extra cayenne mixed in there.

Raw Veggie Burritos
Chopped up all my remaining veggies and wrapped them up in raw nori sheets.  I spiralized my zucchinis and dressed them up in my left over mango basil dressing which was still so good after 3 days in the fridge!! (recipe in earlier post) ☺️ Next time I’m going to double up on the nori sheets, as some of my burritos busted open.


Chorizo Burritos

I’ve always seen raw chub rolls for sale at the store, but only now have I figured out something to do with them.


  • Brown Rice (1.5 Cups)
  • Chorizo Roll (Raw)
  • Burrito Tortillas
  • Assorted Veggies  (Onion, Pepper, Tomato, Tomalitos)
  • Cheese
  • Salsa
  • Hot Sauce
  • Oil

How To:

  • Steam Rice, Dice your veggies while it cooks
  • Oil Pan, and put the meat in, add a tiny splash of water, cook on med-high to high for ~12-15 min.
  • Take out the meat, add more oil only if necessary, the oil from the meat should be enough
  • Saute veggies for 8-12 min on medium-medium high
  • Lightly toast the tortilla on an open stove burner (gas only!)
  • Put all the ingredients on the tortilla, roll it up, and wrap it in foil

This ended up making 6 total, if I had really stuffed them it probably would have been 4. They re-heat really well and should last you a whole work week.
