“Hey, Y/N, what’s the theme this year for the big 1-8?” Sheri asks.

“Hmm?”

“Your birthday, silly!” The head cheerleader exclaims. “What are we doing?”

“Oh. Uh, I’m not actually doing anything.” Several surprised what’s sound from around the lunch table and you chuckle. “It’s not that big of a deal, guys. I just- I don’t want to do anything this year. I’ll probably just sleep in and eat junk food all day.”

“And your parents are cool with that?” Jessica wonders. “If I didn’t want to do anything, I know my Dad would still make me have dinner with the family at least.”

“Parents left on a cruise this morning,” you shrug. “They’ll be gone for two weeks.”

I had a cake order for this weekend, and behold! This is what I made: a three layer chocolate cake with raspberry jam filling, rose tinted buttercream frosting and topped with chocolate ganache drizzled raspberries with white fondant flower decoration. 

My cake orders are few and far between, (mostly because I’m back in school now and don’t really have time to take on orders) but I am really proud with how this cake turned out. The beginning of this cake making project began catastrophically, actually- I was initially to design a cake with chocolate ganache drips down the side, similar to a cake I made at pastry arts school. However, the pairing with swiss meringue buttercream didn’t seem to work… pouring piping hot chocolate ganache onto the masked cake just made everything slide off. I scraped everything off and began again, churning up thicker spreadable frosting and waiting until the ganache cooled for a drizzle effect onto the fruit topping. Goes to show that giving up isn’t ever an option! 

Puff Roll with Raspberry Drizzle

Ingredients (roll):

  • 1 cup all-purpose flour
  • ½ tsp. salt
  • 2 large eggs
  • 1 cup skim milk (or regular)
  • 1 tbs. cinnamon

Directions:

  1. Mix everything together (sift flour and mix)
  2. Beat in the eggs
  3. Grease muffin tin GENEROUSLY
  4. Place in a cold oven 
  5. Turn heat onto 450 degrees F
  6. Keep in oven for about 30 minutes

Ingredients (raspberry drizzle):

  • 1 cup raspberry
  • 1 tbs. balsamic vinegar
  • ½ lemon juice
  • 1 cup sugar

Directions:

  1. Put raspberries in a saucepan and turn heat on medium
  2. Cook them down, then add in the sugar, lemon juice, and balsamic vinegar
  3. Mix well and adjust flavors
  4. Put through a strainer
  5. Drizzle over your rolls
  6. Dust with powdered sugar!
Japanese Raspberry Oreo Chocolate Bars

Another find from my last Tokyo trip… Raspberry Oreo Chocolate Bars!

12 individually wrapped bars per bag…

With raspberry flavoring mixed in with the Oreo cookie crumble…

And a raspberry frosting drizzled on top of each bar…

Everyone I know who has tried them has made a face and uttered a two word review… too sweet!

What made me smile this week:

Sunday: We had a little party at my house for the Super Bowl, which brought together a couple of my friends who I haven’t seen in a while. It made me smile.

Monday: I found the leftovers of an ice cream cake in the freezer. Devoured it. It made me smile, and gave me brain freeze, but that’s my fault.

Tuesday: The elevator process is well underway and OH MY GOD THERE’S A GIANT HOLE IN MY BEDROOM! I can’t wait until this project is done, which will give me new freedom right in my own home. It made me smile.

Wednesday: Sarah made the creamiest queso dip. Why are all my smiles about food?

Thursday: I ran (and by ran, I mean drove) to the grocery store with only a t-shirt on. It was 13 degrees outside. I survived, and not only did I survive, I harnessed the mighty power of winter inside of my soul and actually became stronger. It made me smile.

Friday: I splurged on a space heater for my bedroom, (because apparently my heat vents also have SMA), and it doesn’t work, so that’s awesome, but thankfully, I got a 1-year warranty with it! Look at me being a savvy adult. It made me smile.

Saturday: My friend Michaela sent me a picture of a cupcake she bought for me: chocolate with raspberry icing and chocolate raspberry drizzle. I just about lost control. It made me smile.

What made you smile this week?

Moving away is done ! We got up at 7:30am and we were so productive that we’re already finished even though the elevator was broken. Carrying a fridge for 3 stories is a killer workout 💪 I’m fueling up with raspberries and apricots drizzled with lime juice 👅
