Dinner last night: 2 oz black and white quinoa nachos with 1 oz tostidos for 7 points plus! It was amazing! I don’t like Mexican food, and my best friend doesn’t like black beans…and we both cleared our plates!
This is a great and filling alternative for everyone that likes cheesy nachos for dinner once in awhile! This would make great taco filling too!
1cup uncooked quinoa
2 cups water
1 tbsp olive oil
1 small onion
1 jalapeño pepper
3 cloves garlic
1 orange pepper
1 can of corn
1 can of black beans
Juice of 1 small lime
1 tsp ground cumin
1 tsp paprika
1 small bag of shredded Mexican cheese
1: preheat oven to 350 and cook the quinoa
2: sauté jalapeño, minced garlic, and onion until soft/brown
3: add in the corn and red pepper. Cook for 3-4 mins
4: add the black beans and ½ cup cheese to the quinoa saucepan
5: add spices and cilantro to the corn/onion/garlic/pepper pan
6: combine everything in glassware and stir
7: put the rest of the cheese on top and cover with foil. Cook for 20 mins
8: remove foil, cook for 5-10 mins
9: enjoy with nachos, avocado slices or anything else!
I would consider adding enchilada sauce or tomatoes before baking next time!
