Ok, I’ll be honest with you. I wasn’t planning on posting this picture on my tumblr, but then I realized: This is actually a REALLY good recipe and I use it SO OFTEN. And so here you go; an extremely delicious way to cook your tofu or seitan!

When I absolutely don’t have time to put into preparing a meal or studying leaves me out of energy 🙈 frozen veg with chickpeas cooked in a bit of tomato sauce, spices and turmeric will always be my staple 💛🌱🥕

Teriyaki roasted sweet potatoes - you are my life! these roasted veggie quinoa bowls are my go-to’s for easy quick healthy dinners!!

Recipe for pictured:
-toss 2 medium cubed sweet potatoes w ¼ c teriyaki sauce & 2 tsp sriracha sauce
-roast in the oven at 400 F for 40 minutes, stirring every 10-15 min
-lay broccoli on a pan, drizzle w olive oil, & sprinkle w garlic powder, salt, & pep. Pop in the oven for the last 20 minutes
-bring ½ c rinsed quinoa & 1 c of water to a boil, then cover & simmer on a low heat for 15 min
-put everything together & top with pepper, avocado, & green onion!!

It couldn’t get any easier than that! This made 2-4 servings & was so so so so yum :) :)

ROASTED VEGETABLE & QUINOA HARVEST BOWLS

This recipe requires just 30 minutes and 10 ingredients to prepare, and the leftovers reheat beautifully, making it perfect for lunches throughout the week.

& this was just a quick & easy & light vegan dinner on a budget i made today… as i am taking a course, my whole daytime is busy & at the end i am quite tired… so i had already~made butternut squash soup + bread & organic hummus + lettuce & pear tomatoes & beet (with nutritional yeast + himalayan salt + dried parsley + malt vinegar)

the reason why i have been sharing these very simple meals is because i really believe you can be vegan without having much money, even in the uk where food can be quite expensive… so only a raise of awareness on if you are not vegan because you have this idea that it is very expensive, it truly isn’t. it’s all about learning & being conscious. & about making your health & how you feel a priority! give it a try ~ it is so very simple & i have been vegetarian for 8 years now & i am still learning everyday! just felt like sharing! infinite love to all you! ~

make this right now:

- preheat oven to 450 degrees, line a sheet pan with parchment paper or foil, shiny side down. Lightly coat with olive/coconut/grapeseed oil

- rinse salmon filet under cold water, pat dry, place on sheet

- season with sea salt and cracked black pepper, top with @traderjoeslist carolina gold BBQ sauce…I’m telling you it HAS to be the carolina gold, it’s just too good!

- add sliced pineapple, bake in oven for 15-20 minutes, depending upon thickness of your filet

bing, bang, BOOM. deliciousness. served up with some roasted baby bell peppers, brown rice and cilantro.
