Potato Salad (with apple cider vinegar)

-5 cups potatoes + ½ tsp colored salt
-Half an onion, fine dice
-2 scallions
-¼ cup extra virgin olive oil
-2 tb apple cider vinegar
-2 tsp mustard
-½ tsp colored salt
-2.5-3 tb fresh dill
-2 tb Italian parsley

Cube potatoes and sprinkle with the salt; steam potatoes for 10 minutes. Allow to cool uncovered, in medium-large bowl, to allow moisture evaporation. Mix in onion. Whisk dressing together well. Pour over salad and mix. Stir in finely chopped fresh herbs. Chill in fridge for a few hours or over night.
