Hello! I hope this isn't a super annoying question, but I'm trying to transition into being vegan. I'm having a SUPER hard time cause I work long hours sometimes (I worked an 11 hour shift yesterday!) and I don't always have the patience to cook, and a lot of food tastes gross if you refrigerate it and reheat it, so I was wondering, do you have simple/cheap/fast food vegan recipes ? It's so hard to find vegan recipes that aren't like 100 vegetables or involve lots of cooking D:

Not annoying at all! That’s really amazing that you’ve been working so hard. Here are some ideas:

- Breakfast:

  • Frozen potatoes!! I add frozen potatoes to a tofu scramble I make ahead of time, add in things like frozen bell peppers, onions, tomatoes, greens, beans, rice, etc and wrap it up in a burrito with BBQ sauce or tahini. You could even make a bunch of these one day a week and freeze them until you need them!
  • Regular oatmeal - If you have a little more time in the morning, making your own oatmeal (either instant or otherwise) can be yummy, especially if you add in chopped nuts and fresh/dried fruits
  • Cold cereals and almond milk (or other vegan milk)
  • If you have the time, cut up fruit (mangoes are my favorite)
  • Yogurt, granola, and fruit
  • Smoothies - This is my personal favorite because it’s so simple and you can pack a lot in there! These are my fave combos, but anything with fruit and milk/juice/water is great:

    • Spinach, orange juice, frozen banana, ginger
    • 10-20 dates, soy milk, cacao/cocoa powder, and a couple drops of peppermint extract - this tastes exactly like melted chocolate chip mint ice cream!!
    • Frozen banana, spinach, dates, raspberries, blueberries, strawberries, apple juice
    • Dates, strawberries, coconut water
    • Frozen banana, pineapple, mango, orange juice

Lunch/Dinner:

  • Sandwiches stacked with veggies, vegan meats/cheeses are optional but can be yummy
  • Cut up veggies like carrots, celery, and bell peppers dipped in hummus
  • Brown rice stir fry with veggies and legumes
  • Veggie soup with bread
  • Salads with lots of greens and veggies
  • Bean/potato salads
  • Tortilla wraps with veggies, legumes, grains and starches, slathered in BBQ sauce
  • Pasta with a creamy or tomato base (or both!)
  • Potatoes and mushroom gravy
  • Burritos with veggies, guac, and salsa
  • Pizza, homemade or bought
  • Pitas with tons of veggies
