THE ZOMBIE SHOT
¼ oz. (7ml) Apricot Brandy
¼ oz. (7ml) White Rum
¼ oz. (7ml) Gold Rum
¼ oz. (7ml) Pineapple Juice
¼ oz. (7ml) Passionfruit Juice
Jamaican Rum
Bacardi 151
Splash of Grenadine
Pineapple Garnish


PREPARATION
1. In a mixing glass with ice add apricot brandy, white rum, gold rum, pineapple juice, and passionfruit juice.
2. Shake and pour into a shot glass.
3. Layer on Jamaican rum and Bacardi 151 respectively.
4. Add splash of grenadine
5. Garnish with pineapple and set afire.

Waking up with the sunshine: Chia seed pudding with Gooseberries, Strawberries, Passionfruit, Apple, Figs and Apricots 

There’s something irresistable about gooseberries. For me, a lover of passionfruit and pineapple and all variety of sweet-sour vivacity, the burst of tartness in your mouth when your teeth breaks through the tight skin of the berries is such an experience that means I can’t just stop at one. But it’s more than that - it’s picking up the little fruit encased in fragile, wrinkled petals as if the gooseberries have swathed themselves in paper-thin wings whilst they rest, and hearing the rustling crinkle as you unwrap the light brown, gauzy, veined exterior to find a golden ball of sunshine hidden within. 

It’s been so long since I’ve had chia seed pudding, and there’s nothing that captures wonderful feeling of the morning coolness underneath the swaying orchids that hang from the large tree next to our breakfast table, amidst the perfection of the comforting cold softness of Chia seeds. The kind of food for the kind of morning where the quiet is tempered by the sounds of the world coming to life, and I’m not lost in my own world but very much a part of the world around me, and so glad to be here. The tangy, fresh smell of orange peel from my mother’s baking swirls in the air. A story to be continued.

Watermelons in Thailand’s neverending summer. Yesterday, I had a wonderfully adventurous night: learning Muay Thai (Thai boxing) for the first time, hiking through the wilderness of a golf course with one of my best friends as we saw diamonds on the sparkling ponds and crossed bridges that threatened to send us tumbling into the water and mapped out an entire journey in the shadows of divergent paths and glaringly beautiful spotlights, and unexpectedly ended up in a restaurant on a Navy base where I ordered a plate of fruit and ended up with what felt like a mountain of watermelon, pineapple and canteloupe. Laughter and quiet and a sense of incredible mutual understanding left me with a smile on my face even after we got home and watched a Wes Anderson film. And strange things that I remember from a night that went into the morning: he doesn’t like pineapple or passionfruit, and he eats watermelon seeds, because science says that watermelon trees won’t grow in your stomach. Perhaps opposites attract, and that’s why we’re best friends.
