pineapple mojito

i got bored with the traditional juicing recipes online, so I created a list of some of the more fun juicing recipes i discovered if you’re into that sort of thing ^_^ Hope you like them!

(Should you insist on putting bananas in your recipe, add them in afterwards via blender

⚡️🍎Apple Pie
* First sprinkle ½ tsp of cinnamon and ½ tsp of nutmeg into your home juicing machine. 
* Then make apple juice with 4 large sweet apples and carrot juice with 1 large carrot (saving the pulp for sauce). 
* You’ll end up with 2 cups of delicious apple pie juice that you can serve over ice. 
* Drink immediately.


🍊⭐️Orange Creamsicle 
* 4 peeled, organic oranges
* 2 organic pears or apples
* 1 sweet potato
* 2 cups ice, optional

🍍🍦 Pina colada 
* 4 kale, chard, or collard leaves
* ¼ pineapple
* ½ cup coconut water
* 1 lime (optional)

⭐️🍓 StarBurst
* 1 cup strawberries (or more)
* 1 lemon
* 3 oranges
* Pineapple chunks

🍍💞 Tropical Pink Drink
*1 pear
*1 beet
*1-2 inches ginger
*1 ½ cups pineapple, in chunks

🌿⭐️ Summer Mojito
* 1 cucumber
* 1 large pear
* 1 large handful mint
* ½ lime

🍅🍲 Tomato Soup Dinner
* Tomatoes
* Basil
* garlic or onion optional

🍠🍦 Sweet Potato Pie
* Apples - 2 medium 
* Carrots - 6 medium 
* Sweet Potato - 1 sweetpotato, 5” long 

🍕 Liquid Pizza
* Basil (dried) - 1 dash
* Cauliflower - ½ head medium 
* Cucumber - 1 cucumber 
* Tomatoes - 2 cup cherry tomatoes

SPICY PINEAPPLE MOJITO GREEN JUICE

A few posts back, I wrote about coming back to my body, returning to a place that was fun and open and playful and, yes, seriously booty burning. Pilates has been that for me since I was a teenager—a safe haven where I knew I wouldn’t get hurt amidst all the dance and yoga. The miraculous powers of the reformer and all its straps and handles kept my often hyper-mobile spine in check. At this juncture in my life, I have officially begun calling the reformer my boyfriend.

Lucky for me, I got to hang out this weekend with the beautiful and incredibly kind Heather Dorak, creator of Pilates Platinum. Where the reformer is my boyfriend, Pilates Platinum is that infinitely encouraging best friend. Jamming music? Check. Bad-ass instructors? Check. Bangin’ results? Check. (I mean, come back and ask me next month—pretty sure my booty is getting hella tight, but you can be the judge of that.)

For our hang, I blended up a spicy pineapple mojito green juice with a chipotle salt rim to refuel post-Pilates.

PINEAPPLE VANILLA MOJITO

Ingredients:

  • 2 oz. Club soda
  • 1 Organic pineapple wedge
  • 4 Organic mint leaves
  • ½ oz. Organic agave nectar
  • 1 oz. Papagayo Organic White Rum
  • ¼ oz. Navan Vanilla Liqueur

Garnish:

Pineapple wedge and mint leaf

Glass:

Tumbler

Preparation:

Muddle the pineapple, mint and agave nectar in a tumbler, being careful not to pulverize the mint. Add the rum, Navan and a handful of ice. Top with club soda and stir. Garnish with a pineapple wedge and a mint leaf.

GRILLED PINEAPPLE MOJITO

Serves 6 to 8Ingredients:
  • 1 cup sugar
  • 1 cup water
  • 1 bunch of fresh mint, about 1 ½ tightly packed cups, washed and divided
  • 6 (½-inch) slices of grilled pineapple, cored and cut into 1-inch pieces (see Recipe Note)
  • 1 cup freshly squeezed lime juice
  • 2 ½ cups light rum
  • 1 liter club soda, chilled

Preparation:

  1. In a small saucepan, combine the sugar, water and half the mint. Simmer over medium high heat just until the sugar is dissolved. Strain and chill.
  2. In a large pitcher, combine most of the pineapple, the rest of the mint and a splash of the lime juice. (Reserve 6 to 8 pieces of pineapple for garnish.) Muddle to release the aromas of the mint and smash the pineapple. Add the simple syrup, the rest of the lime juice, the rum and club soda and stir.
  3. Pour into 6 to 8 ice-filled glasses and garnish each with a piece of grilled pineapple.

Recipe Notes

  • Grilled Pineapple: Grill the pineapple for 3 minutes per side over medium high to high heat, just until browned and caramelized
  • It’s a little time consuming to squeeze a cup of fresh lime juice but it’s so worth it. Bottled lime juice has a chemical aftertaste that will take away from the fresh and bright flavors of your drink.
