This is one of my favorite vegetable dish. It is made of beans that are boiled and sauted together with garlic, onions, and tomatoes. Pieces of meat, tinapa, or chicharon or all of them are also included to add more to the taste.
Bicolanos are known for their preference of spicy foods or ones with coconut milk. This dish is named after a train and is deliciously spicy. You’ll need a lot of rice to cope up with the heat! My dad and my uncles, all of them bicolanos, cook great bicol expresses. Each of them have their own style but I think all of them are great.
Veggies galore! Pinakbet is the pinnacle of all the vegetable dish of Philippine Cuisine. Why? It is made up so many veggies, I can’t even enumerate them all. There are so many styles and vegetable combination in this dish. The veggies are cooked together with bagoong to give a distinct, only-in-the-Philippines taste.
