vegan apple cider madeleines

I recently wrote out a list of things that i’d like to learn how to make, that which will broaden my experience in pastry making and generally as a self-taught baker. the list was quite long and i noticed that i hadn’t made some pretty basic things such as madeleines. i bought the pan a few months ago but it just sat as most of my newly bought things do. so to show that i indeed need all of these pans i order to my husband and also to check these off my list and finally taste them,  onto apple cider madeleines that are btw vegan for my dairy free people, made with aquafaba and vegan butter.

i’ve also begun writing down my recipes on actual paper because although i love evernote, i like the authentic feel of writing them down and smudging them with my batter tainted fingers and hopefully my kids will gather up those papers one day and look through them and try to figure out whether i meant ¼ tsp or a cup and begin their own baking adventures.

as far as the flavor, the apple cider idea came because i wanted to make apple flavored madeleines but didn’t want to put actual apples inside considering their petit size. i wasn’t sure if it would affect their texture or not.

 I remembered making apple cider donuts from thefauxmartha (definitely make these!) and she instructs to reduce some apple cider to strengthen the flavor along with butter. i figured since you have to melt the butter in madeleines anyway this would probably be the best method to take and it worked!

within the first bite, there was a buttery, crispness relative to cookies but abruptly replaced with a sponginess familiar to a cake, the perfect emulsion! the apple familiar smiles through with hints of warm spices. i decided to coat these with cinnamon sugar like traditional apple cider donuts. i knew that i’d made a good choice in baking these and im excited to finally check them off of my list although im sure i’ll constantly revisit them.


1c flour

2/3c sugar 

1 tsp baking powder

¼ tsp salt

6 tbsp aquafaba (chickpea water)

2/3c vegan butter, melted

1/8 tsp apple spice

¼ tsp cinammon

¼ c apple cider

1 tsp vanilla

cinnamon sugar:

1 tsp cinnamon

1/3c sugar

pulse in a blender until fine but not powdery.


preheat oven to 400F. put apple cider and butter in a saucepan melt allow to melt and simmer for about 3 mins then remove from heat. in a medium bowl, whisk flour, baking powder, salt, cinnamon and apple spice. in a stand mixer whip aquafaba until foamy. add in the sugar continue to whip until glossy then stream in the butter/apple cider mixture along with vanilla. beat for 4 mins until you have a smooth batter! thoroughly grease and flour your baking pan. place one tbsp of batter into each mood and bake for 10 mins until edges are golden brown. once they are done remove from oven and tap pan on the counter to release. allow to cool slightly on a cooling rack and then toss in the cinnamon and sugar.
