CINNAMON (VANILLA) SOYGURT PANCAKES

 7-8 small pancakes / 5-6 medium ones

INGREDIENTS

130g plain unsweetened soygurt
70ml rice milk or any other non-diary one
1tbsp melted coconut oil
2tbsp maple syrup
105g flour (whole grain spelt one or buckwheat flour)
1/4tsp cinnamon powder (or bourbon vanilla)
baking soda (at the tip of a knife)


DIRECTIONS

 In a bowl mix the soygurt , rice milk , maple syrup and melted coconut oil. Whisk until well combined. In a small jar mix the flour , cinnamon and baking soda. Shake well a few times until it combines. Slowly add the flour mixture to the mixed wet ingredients while whisking. The texture should be smooth , sort-of-thick but still pourable. Pre-heat the pan to a medium temperature. If its a non-stick one , no additional oil should be needed. With a spoon pour some of the mixture onto the pan ( 1 ½ tbsp = 1 pancake) and form a round pancake shape. When the edges of the pancake start drying out / bubbles start to form ,flip the pancake and leave cooking for other minute or so . Repeat until you run out of pancake dough. Serve with fresh fruit , nut butter and maple syrup. RECIPE can be found in BULGARIAN on spirala.bg ’s website !

Here is the recipe for my vegan pancakes:
150 gram buckwheat flour
20 gram sugar
1 tsp baking soda
375 ml sojamilk
½ tsp @finnberry blueberry powder
½ @squarebars Cocoa Cherry
Direction:
Mix everything in a bowl together, besides the blueberry powder! Make sure to split the dough and mix it with the powder afterwards. Preheat the Pan and fry the pancakes for 2 minutes in it.
For the crumble just preheat a half squarebars and top it.

‘THE (almost) EIFFEL TOWER OF PANCAKES’

1 ripe mashed banana
120ml unsweetened rice milk
 2tbsp maple syrup
1tbsp melted coconut oil
65g buckwheat flour
1tbsp @purplebalance omega protein
1/4tsp bourbon vanilla (optional but adds a more vanilla taste)
baking soda (at the tip of a knife)

125g fresh blueberries (in the pancakes & for decoration)
1tsp coconut cream
maple syrup
a few mint leafs   for decoration

In a small bowl mix the mashed nana , rice milk , maple syrup and coconut oil. Whisk until well combined. In a small jar mix the flour , protein powder , bourbon vanilla powder and baking soda. Shake well a few times and slowly start adding to the mixed wet ingredients while whisking. The mixture should be sort-of-thick but still pourable. Pre-heat the pan and pour a tbsp of the mixture onto it , add fresh blueberries in the pancake and wait until the edges start drying / bubbles start to form. Flip the pancake and leave cooking for another minute or so. Repeat until you run out of pancake dough. Stack ‘em high , add your toppings (snap a pic and tag both @pearsnpancakes @purplebalance IN the pic) and enjoy while the pancakes are still warm.

DOUBLE (CAROB) CHOCOLATE DARK CHOCOLATE CHIP PANCAKES


( 8-10 small pancakes )

INGREDIENTS


60g plain soy gurt (works with a hen egg too)
100ml tiger nut milk
1 1/2tsp coconut oil
2tbsp coconut sugar
70g buckwheat flour *
2tbsp carob powder
1/8tsp baking soda
2 medium pieces dark chocolate

DIRECTIONS


In a small jar mix the flour , carob powder and baking soda. Shake until well combined.
In a bowl mix the soygurt , tigernut milk , coconut oil , coconut sugar and whisk until well cobined.
Slowly add the flour mixture to the wet ingredients while wisking. Pre-heat the pan to a medium temperature and spray some coconut oil onto the pan. Pour about 1tbsp of the mixture and form a round shape.
Add the chocolate chips (dark chocolate chunks) onto the pancake. When bubbles start forming and the edges of the pancake dries up , flip the pancake and leave cooking for about a minute.
Stack ‘em high , add your toppings of choice and enjoy !

NOTES
* If you eat gluten I reccommend whole grain spelt flour.
