Egg “muffins” for the week. Such an easy dish to prepare and the eggs last up to 5 days. Precook sausage, diced onions. Scramble your eggs, add cooked ingredients (I also added salsa) pour into cupcake pan can bake at 350 for 15-20 min. Made Cabbage “Pasta” and Pesto this weekend, taken from www.fastpaleo.com   Marinated the chicken in hot sauce prior for an extra kick.  This pesto smelt SOOOO good, it was beyond amazing.  I did change up the recipe a tad and used almonds instead of pine nuts due to being out of pine nuts.  I chopped them in the food processor and mixed them in with the cabbage.

Salad with a little bit of everything tonight, salmon with the maple glaze and sautéed mushrooms in with the salmon which gave them a sweet hint it was a nice change, some spicy cashews and some cranberries over greens. However, my non paleo friends ate a few so they couldn’t have been to horrible! Was a LARGE recipe, made a Tupperware of cookies. I will post but I’m not giving guarantee of tastiness- play around with it!
2 bananas, 1 egg, 2 cups almond flour, 3 tablespoons tapioca starch, 1 tablespoon honey, ½ cup almond butter, ½ cup coconut milk, 1 ½ cup non diary, or soy chocolate chips. Bake 350 for 20ish. They do not spread so do not make them in huge piles 😊
