Carrots are a nutrient rich food that can sometimes be underrated. Carrots contain Vitamin A, C, K, B8, Folate, Potassium, Iron, Copper and Manganese. With an abundance of anti-oxidants and beta-carotene these beauties provide us with so much health supporting benefits and are so versatile. Beta-carotene acts as an antioxidant and protects the immune system. Research shows that carrots do help maintain healthy vision (so it’s not a myth that carrots are good for eyesight) and promotes healthy skin, teeth and soft tissue. The best way to eat them is raw, juice them, put them in salads, smoothies, raw cakes & slices and of-course bake with them. Always in season and great tasting.  If you haven’t had organic carrots then go ahead and try them - fresh, crisp and full of real flavor.

My all organic dairy free, egg free & refined sugar free apricot tart. I know it’s a bit early for dessert but couldn’t wait to share with you all. Hope everyone is having an awesome weekend xo

Tart Recipe:
1 cup organic self raising flour @kiallapurefoods
½ cup organic almond meal
½ cup organic grapeseed oil
1 tbsp organic coconut sugar
1 tbsp organic vanilla essence @groundedpleasures
½ tbsp organic cinnamon
1-2 tbsp organic rice malt syrup @pureharvest on top of apricots (just drizzle over)
1-2 cups ripe raw organic apricots

Place all dry ingredients together & then add the wet ingredients until you get the right texture. Roll into your tart mould and place your raw apricots and drizzle with the rice malt syrup. That’s it, the simplest tart recipe ever, and I created it by experimenting! Hope you like it, this is going to be a staple for us - just top with whatever fruit you like.
