Sorry that I went missing for a couple of days. I moved into my summer apartment! Move in day was very stressful because the previous tenets left a lot of their belongings behind. My family and I had to clean up their messes and pack their stuff. But now my roommate and I have made the place our own and are excited for a great summer.
Classes start today! My classes are only on Tuesdays and Thursdays though, so today I just bought my text books and have been getting ahead on the readings. This morning my roommate and I woke up early and went to the gym, and then we had a really nice breakfast. I’m in such a good mood!
7th day streak on Duolingo. I’m 45% fluent in Danish. Today I learned prepositions and conjugations, then I bought that cute little flowery notebook that I’m going to use as a vocabulary for all my Danish words. Later I went with my boyfriend in the city centre where they exposed an European market with all kind of food 🤤.
Today’s age is about doing everything faster, better and cheaper. We are living in a society where we work more than we live. Despite everything I’m confident that we can do a lot more with our life which is the reason I started to use this blog. I want to get more out of life. I want to be a better version of myself. Therefore, there are some things I need to change in my life to achieve this goal. Let’s start with listing my goals and the things I need to do to accomplish them

To say I’m an organization nerd is an understatement in the extreme, but I gotta say that this was one of my best ideas yet. I’ve found that frozen fruits and veggies are a great way to get healthy food in me without a time-frame (that is, pressure to cook fresh produce before it goes bad), but it takes a whole damn spoon to get those stupid bags open with their little zips and twist ties and rubber bands, and that really discouraged me from getting into the frozen stuff as frequently.
This set-up makes it super-easy! Just open up a drawer, scoop, and dump wherever you need it. The scoops, which I love, are repurposed plate dip clips, and they clip to a shelf pretty easily. Green is for veggies, red is for fruits. The drawers (purchased at my local Fred Meyer) are modular, so you can stack however many you need together. They’re not quite as deep as the freezer, so I can hide extra bags of frozen stuff behind them for refilling.
On the right side, I have blueberries (for my morning oatmeal), edamame, peas, kale, spinach, and broccoli. On the left, I have frozen ice cubes of pasta sauce and dairy-free cheese sauce (for adding to bowls of pasta), along with some frozen tofu, which I haven’t tried out yet but am hoping to add to instant miso soup. Since it’s not summer I haven’t been getting into the big bag of frozen fruit up top for smoothies, but I may end up buying a plastic box for that as well.
The one drawback to these drawers is that they aren’t perfectly sealed–this means that whatever’s in them will dry out a bit more than if it’s being kept in a closed bag. That being said, after a month or two this hasn’t affected things much once the foods are reheated, so it seems like a worthwhile tradeoff.
New moms these days kind of make me not want to make mommy friends when I decide to start a family. Everyone is so judgemental these days! And apparently it’s a competition on who is the “best mommy”!
I just listened to a woman brag about how she only feeds her kids organic food, only uses organic products, and blah blah blah. Which is great, dont get me wrong!
But dont shame mothers who dont do what you do. She shamed my friend for giving her kid (who is 5 years old) velveeta mac n cheese.

JB: The one guy who is literally gives off the “don’t-talk-to-me” look. Doesn’t look like he wants to be there always giving off that cold vibe/bitch look face. Yet once when friends he’s this happy go lucky type guy. Willing to pick a fight with the professor on certain topics in class discussion.
Mark: The really quiet one in class but manages to find friends in that class by talking about something. Will be the one who has his Netflix playing whenever he’s “doing work”. The one that you see outside his dorm sleeping next to his door because he either lost his keys or got locked out.
Jackson: The really healthy guy. You always see him on the way to the school’s gym and always carrying a gallon of water everywhere he goes. Promotes healthy living 24/7, willing to go broke just so he can have organic food products. Will only indulge in fast food once a week but spend 3 hours at the gym the next day. Somehow passing his class with flying colors.
Junior: You see him in the library 24/7 always doing his work and trying to get ahead in his classes. Makes sure his friends are doing their work but you’ll see him at every frat party that weekend. Doesn’t need to worry about doing homework or anything that weekend because he already did it during the week
Youngjae: The one musician who is carrying his instrument everywhere he goes. Will perform wonderwall every single day, could do any other song but prefers to sing that one song. Definitely the loud one in class even if the classroom has about 20 people he still will be the loud one but with a hint of awkwardness.
Bambam: The one that has better clothes than you and everyone on campus. Will keep up on the latest fashion trends. Probably has 20x’s more clothes now then when he arrived at school. Always friendly with everyone but will start a fight if someone says something stupid. Not paying attention in class, always on his phone unless it’s the class that he actually likes.
Yugyeom: Hyper 24/7 will be with his group of friends in the same spot every single day. Very sweet to everyone he meets/talks to will definitely try to befriend you before the two of you go your separate ways. Constantly playing loud music that people on his dorm room floor can hear it.
Ingredients: *1 ½ cups flour *1 teaspoon baking powder *1 teaspoon baking soda *½ teaspoon fine sea salt *4 medium-large, very ripe bananas, mashed *½ cup brown sugar (or coconut Sugar) *1 tablespoon ground flax seeds mixed with 3 tablespoons water (equivalent to 1 egg) *1/3 cup organic coconut oil, melted, plus a little more to oil the muffin tin *dark chocolate chips- optional
1. Preheat oven to 180 degrees C.
2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt; set aside.
3. In a large bowl, combine bananas, sugar, flax and water mixture, and melted coconut oil. Line the bread ton with baking paper (or rub coconut oil on the inside to avoid sticking). Fold the flour mixture into the banana mixture, and mix until smooth. Fold in chocolate chips, if using.
4. Place mixture into bread tin and place chocolate chips and half a banana on the top of the bread (optional)
5. Bake in preheated oven for 25 to 30 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool slightly before removing from the pan.
