Miniature cowboy burgers. Beef, pork, veal (1 pound), Montreal steak seasoning (dash), Italian roll (3), Red onion (¼), Cooper sharp cheese (8 slices), Olive oil (dash), kosher salt (dash), Bbq sauce (¼ cup), Bacon (4 slices). Slice bread into crostini, drizzle with olive oil and salt and bake in 350 degree oven about 10 min. Sautee onion in olive oil and salt. Mix meat with montreal steak seasoning and form into 16 meatballs. Press into patties and sear on both sides in pan. Assemble burger with cheese on croatini, then bacon, then onion, then burger, then a dash of bbq, and more cheese. Bake in oven until cheese melts. About 7 minutes.

Spicy Shrimp Etouffe. Shrimp (2 pounds), Red Bell Pepper (1), Jalapeno (1), Vidalia Onion (¼), Garlic (3-4 cloves), Thyme (1 tablespoon), Chicken stock (2 cups), Water (1 cup), Kosher salt (dash), Pepper (dash), Cayenne (dash), Butter (5 tablespoons), Flour (5 tablespoons), Olive oil (1 tablespoon), Stewed tomatoes (14 oz.).

Peel shrimp and reserve shells. Sautee shells in 1 tablespoon butter until pink. Add water and chicken stock and bring to boil. Simmer on low for 15 minutes then remove shells. Season broth with salt, pepper & cayenne. Finely dice peppers, onion, garlic and thyme and then sauté in olive oil in cast iron pan. When translucent, add 4 tablespoons of butter, flour, salt, pepper, and cayenne and stir.  Add broth to vegetables and flour and stir until thick. Add tomatoes and shrimp and cook until shrimp are pink. Serve with rice and hot sauce.

Gourmet Burgers 

These burgers were inspired by the amazing, organic bison burger I had last week at Yeah!Burger when I went home to Atlanta. The burger I had was an organic bison burger with goat cheese, fig jam, caramelized onions, and arugula on a whole wheat bun. These are beef burgers but with a delicious twist. 

Ingredients 

1/3 lb ground chuck 

1/3 lb ground sirloin 

1/3 lb ground beef 

Burger seasoning: 1 tsp of each: black pepper, kosher salt, chili powder, granulated garlic, granulated onion, smoked paprika, and ½ tsp mustard powder. 

Small amount of olive oil 

Arugula 

Caramelized onions - recipe here: + 1 tbsp sugar 

Goat cheese 

Organic peach jam 

Buns of your choice - I chose French Brioche 

Directions 

Heat a cast iron pan over medium heat. Also, preheat the oven to 400 degrees Fahrenheit 

In a large bowl, mix together the three ground meats and the seasoning blend.

Form patties – you should be able to form about 4-6 burgers. 

Once formed, place into pan and sear both sides to develop a nice crust. 

Finish in oven to your desired temperature. 

Toast your buns with butter and assemble! 

Be forewarned that these are incredible.
