My mother’s partner bought strawberries yesterday (for some reason I don’t know) and although I hate eating strawberries when they are not in season, I had to use them somehow. So here is a hint of how summer will taste like:
Vanilla chia porridge made with vanilla soy milk and topped with a banana, a kiwi, fresh strawberries, almondbutter, fresh chopped macadamia nuts and a sprinkle of coconut flakes.
although they don’t look too amazing haha. This had been my stand-by recipe lately:
¼ cup oats,
1 cup almond milk,
½ banana, mashed,
½ tbsp chia seeds,
Spoonful of jam,
Dried mango (it puffs up and infuses the whole bowl with magical tropical flavor)
Try it, I’m not messing around here!!
Half a grapefruit (or you could substitute pineapple)
Two ish tbsp maple-free syrup (or agave, or honey, or sf syrup…)
Those are all just estimations, you can totally eyeball it. Anyways, put everything in a medium pot and bring it to a boil. Then let it simmer for ten minutes!
Okay, so the fruit juices coalesce and bathe the oatmeal in this delicious, tropical, sweet, syrupy coating and it’s just… I’m obsessed haha. Plus this makes a TON of oatmeal so you get to eat it for a long time! ;P
