Vegan oats

A variation of my usual creamy oatmeal, as this is more of a soaked muesli texture. Top with bananas, coconut sugar, blueberries and granola - yum, you’ve got a quick and easy breakfast!

Ingredients: ½ cup oats, ½ cup water, ¼ cup almond milk, 1 ripe banana, ½ banana to top with, 1 tsp (coconut) sugar, 1 tbsp peanut butter.

Method: 

  1. In a small saucepan, mash a ripe banana and cook on a high heat for a minute or two. This will release the sugars and enhance the flavours. Stir in the peanut butter, so it melts through.
  2. Then add the oats and water and cook for a minute.
  3. Add the almond milk and combine. Turn down to a low-medium heat.
  4. After a few minutes put into a bowl and top with whatever you fancy!
