What is your baked oats recipe?? 😍 I was planning on oats for dinner and that looks amazing! Haha

Ohh ok!! Here’s an Autumny baked pumpkin oatmeal I have been making lately!!

Ingredients:

  • ½ cup oats 
  • cinnamon
  • 1 tsp maca powder (for that supposed hormonal balance)
  • half a banana 
  • ¼ cup canned pumpkin
  • splash of vanilla
  • pinch of baking powder
  • like 1/3-½ cup cashew milk

Directions:

  1. Preheat oven to 350 degrees fahrenheit. 
  2. Take an oven-safe bowl or ramekin and add the oats, cinnamon, baking powder, maca powder if using, and mix together. Add the banana, pumpkin, vanilla, and cashew milk, and mix until well combined. 
  3. Bake in the oven for about 20ish minutes!
  4. Then top with whatever toppings you’d like :)

1 cup oat flour *you can make this by putting whole or quick oats in a blender/food processor
3 tbsp. honey
1 ½ tbsp. lemon juice
½ tsp. cinnamon
½ tsp. anise
½ tsp. sage

mix all the ingredients to form a ball of dough. pinch off small wallnut sized pieces and shaped into either crescent moons or circles. bake for 15 minutes at 350F and let cool for 10 minutes. makes ~12 cookies

Honey nut treat

This dainty treat can be found in parlours, Jarl’s courts and pantries throughout Skyrim and are popular to serve at gatherings. Packing both sticky chewiness and a delicious crunch, they are a great snack on the go and will be a hit at your next feast. A great complement to mead!

You will need:
¼ cup pecans, chopped
¼ cup walnuts, chopped
¼ cup almonds, chopped
3 tbsp rolled oats
2 cups brown sugar
½ cup water
½ cup butter, melted
1 cup honey
1 tsp salt
2 tsp cinnamon
2 tsp nutmeg

Method:
In a pot, combine the sugar, honey, water, salt, and butter. Cook on medium-high heat until boiling, stirring continually to avoid burning. After about 10 minutes, the mixture should have thickened into a heavy syrup consistency.

In a mixing bowl, combine your nuts, oats, cinnamon, and nutmeg. Pour the caramel in and stir well with a large spoon. While the mixture is still warm, shape into medium-sized balls and attach them together with a skewer, 3 balls per skewer

Place your skewers on a tray lined with baking paper, and refrigerate for 30 minutes before serving.

Breakfast was the usual bowl of oats and a cup of coffee with vanilla soy milk. I cooked the oats in soy milk with half a banana mashed and topped them with the rest of the banana, raspberries and almond butter. With a ton of cinnamon inside and more on top.
I couldn’t wait until lunch was ready so while preparing it, I snacked on red bell pepper and cucumber with hummus!
Lunch then was millet (mixed with turmeric hence the yellow colour) with broccoli, zucchini, tofu and white beans all roasted in coconut oil (protein 💪🏼) and sprinkled with gomasio. 
For dinner we ordered pizza. I asked for the vegetarian one with a whole spelt base and no cheese and instead topped it with fermented tofu feta ‘cheese’ myself.
Now I’m just going to have some dark chocolate- I will probably share a bar with my mom while playing card games as we do most nights :)

Happy Easter to those who celebrate :) Nothing like a loaf of banana bread on Easter Sunday :) Super moist and delicious-I used ½ cup oat flour, 1 ½ cups wholemeal flour, 1 tsp baking soda, 3 large ripe bananas, 1/3 cup unrefined cane sugar, 3 tbsp brown rice malt syrup, 3 tbsp apple sauce, 1 tsp allspice, 1/3 cup olivani (or any vegan butter), ¼ cup almond milk, dash of vanilla essence and a few handfuls of frozen berries and dark chocolate (I used lindt 90% which is free from dairy milk) see us vegans don’t just eat grass :)

Coconut Pistachio Granola (Oil-free)

2 cups GF oats

¼ cup maple syrup

½ tsp. cinnamon

1/8 tsp. all spice

¼ tsp. salt

½ tsp. pure vanilla extract

1/3 cup chopped raw pistachios

¼ cup desiccated coconut

Preheat oven to 300 degrees Fahrenheit. Line a large baking sheet with parchment paper.

In a mixing bowl, combine the oats, maple syrup, vanilla and spices then transfer to baking sheet and bake for 35 minutes. Next, remove granola form oven and add pistachios and coconut and bake for another 10-12 minutes or until the coconut is lightly toasted. Granola keeps for about 2 weeks stored in an airtight container.

>Banana Caramel Pancakes<

INGREDIENTS (pancakes)
(makes 5-7 pancakes)

½ cup rice flour

½ cup oat bran

1 tbsp coconut sugar

1 tsp maca powder 

1 ½ cups 
rice milk/any non dairy milk 
1 big mashed banana

4-5 drops vanilla essence

METHOD
Combine dry ingredients first and mix in a food processor until looks like fine bread crumbs. Add wet ingredients (banana, milk, vanilla) and blend. Set a non stick pan on low/medium heat and spray with coconut oil. Use about 1/3 cup of the mixture for each pancake.

INGREDIENTS (caramel)
1 tbsp hulled tahini
1 tbsp coconut milk
1 tbsp coconut sugar
1 tsp rice malt syrup/maple syrup
2-3 drops vanilla essence

METHOD
Mix together until smooth creamy texture. Pour on top of the pancakes.

I had way too much spare time this morning so had a bit too much fun decorating my oatmeal😂  I cooked 1 cup of oats in almond milk and topped them off with apple, kiwi, strawberries, peanut butter, banana and coconut😋 Vegan food though😏👌 Yesterday I woke up to 3000 followers on this blog! Thank you sooo much to each of you, it’s really easy to compare the following I’ve got to some of the larger accounts I look up to, but I can’t even imagine a crowd of 500 people, let alone 3000😱  I’ll try to keep posting throughout the year (hopefully university won’t be too overwhelming)

Up close and personal: overnight oats. One of my top healthy meals of choice.

Blend the following ingredients in a blender or food processor:

1 cup unsweetened almond milk
1 heaping tbsp almond butter
1 tbsp maple syrup
1 tsp maca (optional)
Transfer liquid mix to a bowl or jar and add between ¾-1 cup GF oats.

Allow oats to soak in fridge for at least one hour or overnight.

I topped my oats with fresh strawberries and pomegranate seeds, cacao nibs, desiccated coconut and a scoop of raw cacao powder.

Mango & Pineapple Smoothie bowl!

I absolutely love this tropical smoothie bowl, that’s both delicious and beautiful to look at. Here’s how to make it!

Recipe:

1 frozen banana
1 cup of mango
1 cup of frozen pineapple
1/3 cup of oat milk

Mix everything together in a mixer until it’s smooth. Top it of with some fresh fruit and coconut flakes!

Healthy vegan banana cookies 🍪
Recipe:
- 4 bananas
- 1 ½ cup of oats - 1 tbsp cinnamon

Optional ingredients:
- chocolate chips
- dried cranberries - any kinds of nuts
Etc

Mash the bananas in a food processor until it forms a smooth paste, stir in all the other ingredients. Scoop a spoon of the mixture on a baking sheet and pat it down to form the cookie - repeat with the rest of the mixture until the tray is full. Bake it in a preheated oven on 200 c for 10-15 min.

§2 flax eggs (for vegans and people who vant have dairy things) Recipe Here or 2 normal eggs
§1 teaspoon vanilla

How To-Preparing flowers•

∞Wash them thoroughly. 
∞Measure the required quantity of intact flowers into a measuring cup. 
∞Hold flowers by the tip with the fingers of one hand and pinch the green flower base very hard with the other, releasing the yellow florets from their attachment. Shake the yellow flowers into a bowl. Flowers are now ready to be incorporated into recipes.

How To-Cookies•

∞Preheat oven to 375°F/187ºC. 
∞Blend oil and honey and beat in the two eggs and vanilla. 
∞Stir in flour, oatmeal and dandelion flowers.
∞Drop the batter by teaspoonfuls onto a lightly oiled cookie sheet and bake for 10-15 minutes.

It’s a cinnamon brown sugar oatmeal smoothie (my latest obsession) with some whipped coconut cream and a GF cake doughnut. That’s all. 🤣

Cinnamon Brown Sugar Oatmeal Smoothie

1 frozen banana
1 cup unsweetened almond milk
¼ cup GF oats
2 tbsp. brown sugar
½ tsp. cinnamon
¼ tsp. pure vanilla extract
1 cup ice

Blend all the ingredients until smooth.

Vegan GF Cake Doughnuts
Makes about 8 doughnuts

1 cup gluten-free flour (Bob’s Red Mill 1 to 1 baking flour)
½ cup vegan sugar
1 ½ tsp. baking powder
¼ tsp. salt
½ cup unsweetened almond milk
½ tsp. apple cider vinegar
½ tsp. pure vanilla extract
1 flax egg
¼ cup vegan margarine


Doughnut Glaze

½ cup confectioner’s sugar
3 tsp. unsweetened almond milk
To make the doughnuts: Preheat oven to 350 degrees Fahrenheit. Lightly grease a donut pan.
Combine dry ingredients in a large bowl. Combine wet ingredients in a small saucepan over medium to low heat and stir just until vegan margarine is melted. Mix will be warm to the touch. Add wet ingredients to dry and mix until just combined.

Fill each donut pan well ¾ full (about 3 tablespoons of mix). Bake doughnuts for 10-12 minutes or until they are firm and spring back when you touch them. Pop them out of the donut pan and onto a cooling rack to cool until warm to the touch.

To make the glaze: Sift the confectioner’s sugar. Whisk in the non-dairy milk until the glaze is smooth. Add a couple drops of yellow (or whichever color you prefer) vegan food coloring and mix. Dip the top of each doughnut in the glaze then top with sprinkles. Serve at room temperature. Doughnuts can be stored in an airtight container for up to 3 days.

Vegan Applesauce quinoa bread⚜️ Recipe:
1 cup applesauce
1 banana
50 gr roughly chopped dark chocolate
6 soaked dates
1 cup quinoa
Oats (to get the wanted consistency)

Mix all the ingredients in a food processor (except the dark chocolate) and blend everything together. Put the dark chocolate in the mixture and add everything to a form. Bake it on 180 c for about 20 min 😋 enjoy 🌿🍃
