A brief intermission from our fruity goodness to show you some of our typical dinners we’ve been eating as we lose weight. VEGANISM IS NOT RESTRICTION. WEIGHT LOSS IS SO EASY. THIS SHIT TASTES AMAZING!
Mac and “cheese” sauce made from blending together boiled potatoes, carrots, onions, and garlic with some paprika and the littlest dash of salt.
Rice with asparagus, snow peas, string beans. Made sauce with liquid aminos, garlic, sriracha, cane sugar, water. I ate like 3 cups.
Homemade pizza. Veggies. Homemade tofu ricotta. We each had our own. And they weren’t little.
Chili pasta. Made some chili and we had half a box of pasta each with it.
Megs favorite potato wedges. 4 potatoes each baked without oil. Garlic and onion powder.
Homemade sushi. Veggies and avocado.

Avocado-spinach sauce turned out 💣💣💣💣 1 avo, 1 cup spinach, 1 clove garlic, 1 tsp lemon juice, black pepper, pasta water for desired consistency~ atop brown rice pasta, spinach, carrots, shiitake mushrooms, and tomatoes xx so simple yet so damn guuuuuuuud 😜
Shawn and I bought tickets back in December for Indy’s first Mac & Cheese festival, and that was this evening. We had *so* much fun!
Fortunately we arrived early so we were pretty close to the front of the line, it was 12 degrees. We weaved ourselves through a packed room to gather tons of types of macaroni & cheese. We luckily stumbled upon a cocktail table, just perfect size for the two of us, and set up camp. Shawn went to go get us bottled water and I organized our little table. The entire event was arranged in a giant rave-like setting with a stage up front and a DJ to top it off. The vendors were all in the center of the room so the food was the center of it all.
It sounds so silly but we had the funnest time just taste testing and comparing all types of pastas.

I found these Explore Asian Black Bean Noodles at Costco and was blown away! Only 5g net carbs for a huge serving and a surprising 25g protein! Since I stopped eating meat a few months ago, I’ve been searching for ways to make sure I’m getting enough protein and it’s not as hard as you’d think, especially now!
The only ingredients are black beans and water, so they’re healthy, no mystery ingredients/fibers/fillers… And they taste totally normal! The taste and texture of a thin wheat spaghetti noodle.
I made these and topped with olive oil, Parmesan, and Himalayan salt. DELICIOUS! Like REAL pasta! Never going back to crazy shiratake or vegetable mock-noodles!
