Mint Chocolate Chip Cookies


Yields 2 dozen cookies

The things you’ll need

Ingredients
  • 1 cup butter, room temperature
  • ¾ cup sugar
  • ½ cup packed light brown sugar
  • 2 eggs
  • 1 to 3 drops green food coloring
  • 1 teaspoon peppermint extract
  • ½ teaspoon vanilla extract
  • 2 ¾ cups all purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 5 ounces chocolate mints
Equipment
  • Large mixing bowl
  • Medium mixing bowl
  • Whisk
  • Hand mixer
  • Rubber spatula
  • Cutting board and knife
  • Parchment lined baking sheet
  • Ice cream scoop

Let’s get started!

  1. Preheat oven to 350°F.
  2. Roughly chop chocolate mints.
  3. In a medium bowl, whisk together flour, baking soda and salt.
  4. In a large bowl, cream together butter and sugars until smooth.
  5. Add in eggs one at a time, mixing and scraping between each one.
  6. Pour in peppermint extract, vanilla, and food coloring and then mix until evenly colored.
  7. Mix in dry ingredients and then fold in chopped mints.
  8. Scoop dough onto a baking sheet and bake for 8 minutes.

I just found out that redbubble are doing skirts now and I’m pretty much drooling over the nerdy possibilites, I feel like having a patterned skirt is a slightly more sophisticated way to wear one’s nerdiness than a graphic tee can be, so I’m super excited!

They seem a tiny bit short for my tastes, but they’re high waisted so I think they’d still work with my retro aesthetic if I tried hard enough! I haven’t seen one bought and reviewed anywhere yet, so as soon as I get my pennies together to get one I’ll review it for my youtube!

I make Fandom & Geeky cakes for a living… But now I need your help!

For the past 3 years, I’ve made nerdy cakes from my home. From requests from Tumblr, to baking up sweets for companies like Seventeen Magazine, Funko, The Today Show, Youtube Space NY and Nintendo World- but I can no longer work from such a small space, and every week it gets harder to continue to do what I love.

I started a Kickstarter to open a Geeky Bakery- a place you can have all the nerdy treats you love with fandoms you enjoy! But we have just 13 days to raise the rest of our funds to open our doors, and with the way it looks now I’m afraid we won’t make it there.
