Monday’s lunch: a very colorful salad! Spinach with chicken breast, cherry tomatoes, tangerines, sunflower seeds, goat cheese and my homemade strawberry balsamic dressing! It was so delicious! Especially eating it in the backyard with the sunlight. 

For the dressing it’s just strawberries, EVOO, ground pepper, balsamic vinegar, red wine vinegar, a tiny bit of honey (unless your strawberries are super sweet) and salt (I used Mrs.Dash)! Blend it all together and you’re done! I keep mine refrigerated. This is good to make if you have strawberries turning too ripe. 

Mediterranean. Greek salad with no olives and onions bc I hate them lol so I guess it’s just a cucumber tomato & goat cheese salad. With EVOO & red wine vinegar as dressing. EVOO with balsamic or red wine vinegar and a pinch of salt and pepper is a healthier and yummier salad dressing option bc they basically contain 0 fats 0 calories 0 carbs 0 sodium etc but somehow still maintains a strong flavor!

Snack was dates stuffed with goat cheese and spiced pecans. Honestly not as yummy as using medjool dates but medjool is too expensive. Nonetheless SO GOOD!!! I have been obsessed w/ this combination past few weeks. SO BOMB. (best served at room temperature instead of really cold cheese)

Finally tried out my salmon recipe I’ve been wanting to try!! And… it came out GREAT!! So for years I’ve normally always had salmon with my mothers onion and mayonnaise topping sauce. But that is SO much mayo and honestly mayo is pretty disgusting I’m trying to lay off of that stuff. I thought ’what are some mayo alternatives?’ GREEK YOGURT! I mostly just eyed everything so measurements are general guestimates. So here is the general recipe:


  • 1 Salmon fillet
  • 1 cup Greek yogurt (I used Fage)
  • ½ cup finely chopped onions
  • 1 tspn dill weed herb (fresh dill would be even better if you have some!)
  • wedge of lemon
  • salt
  • pepper


  1. Coat the salmon with some salt and pepper on both sides. 
  2. For the sauce, mix together the yogurt, onion, dill, and drizzle in some squeezed lemon juice.
  3. Spread over the salmon. **It may look like there’s too much yogurt sauce but it’s fine! Mine looked like it was like an inch thick of the sauce but when you bake it it all flattens because a lot of it soaks into the fish!
  4. Cover loosely with foil.
  5. Bake in the oven at 350 degrees for about 40-45minutes or until the yogurt sauce has crusted. 

Enjoy this healthy and yummy dish!!

Halve an avocado, pit it, (if you have a small avocado you may need to scrape some of the middle to give more space) crack an egg and put it in the middle, bake in oven at 425 degrees for 15-20 min or until cooked, add some salt, pepper, freshly chopped tomatoes, and sour cream (or plain yogurt). Eat with a spoon just like that or with some whole wheat bread!

Last night’s late night snack was a green monster smoothie!! Finally got to try kale!! I was pleasantly surprised to find actually how tasty it was! I heard kale was very bitter so I was expecting to be eating a nasty smoothie lol. Here is what I put in:

  • 1 large leaf of kale
  • small handful of spinach
  • few chunks of frozen bananas
  • 4 small cubes of cucumber
  • 1 slice of apple
  • little bit of almond milk for some liquid to give it a good mix
