mushrooms n peppers

Healthy version of mac n cheese (ish)! This could easily have been 2 servings for those who like to portion unlike myself 🙃

I used:
Trader Joe’s light mac n cheese - 270 calories
Shirataki spinach noodles - 35 cal
Spinach + arugula - 20 cal
Mushrooms - 20 cal
Shrimp - 100 cal
1(ish) oz. goat cheese - 100 cal
Truffle + olive oil - 200 cal
Garlic salt, pepper, sriracha

This was a huge amount and less than 700 calories all in. If you split it, it’d easily be a filling 350 calorie meal 😋
