What You Need:

  • 1 cup flour
  • 2 TBL baking powder
  • ½ tsp salt
  • 2 egg yolks
  • 1 TBL butter, melted
  • 1 cup milk
  • 2 egg whites
  • 3 TBL sugar
  • Butter and Syrup to serve

For Better than Benedict:

  • A few souffle pancakes
  • Bacon, fried
  • Ham, fried
  • Eggs, poached
  • Cheese sauce and Sriracha to taste
  1. Whip egg whites in a small bowl until foamy. Add sugar and whip until stiff peaks form. Set aside.
  2. Combine flour, salt and baking powder. Whip together eggs yolks, whisk in butter. Whisk in milk. Whisk in dry ingredients and mix until just combined.
  3. Fold in egg whites in three batches. Pour batter into measuring cup with spout.
  4. In a medium non-stick pan, pour in small amounts of the batter. Once bubbles form, flip and cook another few minutes just like regular pancakes.
  5. Serve with butter and warm syrup or stack with fried breakfast meats, eggs, cheese and hot sauce for a cheap and easy Benedict.
