microwave muffin

For celiac folks eating at @dennys:

Eggs cooked on their own are cooked in pans only used for eggs cooked on their own.

Staff will microwave your gf English muffin and Turkey bacon or sausage for you if you ask.

I’ve been visiting family and have basically eaten Grand Slams with Turkey bacon and chicken sausage for 3 days.

I really want some veggies but I haven’t gotten sick…

We went wine tasting this weekend and needed a quick and easy breakfast that we could reheat in the hotel microwave. These muffins worked out perfectly

12 eggs

½ cup heavy whipping cream

1 cup shredded sharp cheddar cheese

1 cup shredded cheddar jack cheese

1 cup of broccoli finely chopped (no stems)

1 package of Farmer John Sausage links (cooked and sliced)

1 cup of crumbled bacon

12 slices of bacon fully cooked in the oven

Whisk together the eggs, hwc, sharp cheddar cheese and broccoli. Season with salt and pepper.

Spray the muffin pan with nonstick oil, and place one fully cooked piece of bacon in each

Divide the sliced cooked sausage and crumbled bacon evenly between the 12 muffins

Divide and pour the egg mixture into each muffin

Top with remaining shredded cheddar jack cheese

Bake at 350 for approximately 20 minutes or until fully cooked

Microwave Blueberry Muffin Bun!

I finally got a microwave installed, so I can now make these yummy muffins in minutes! This one took 3 minutes to cook, which is GREAT! It turned out pretty dense because I used buckwheat flour and I didn’t beat my eggs, but I liked it that way! It was like eating a scone for breakfast, but I used light cottage cheese instead of jam and cream =) Much healthier!

Serves 1
Calories - roughly 300-400 (good range for a breakfast!)

  • 1 egg
  • Olive oil
  • 1 tablespoon buckwheat flour
  • 2 tablespoons of rolled oats
  • 1 tablespoon frozen blueberries
  • 15-20 drops Liquid Stevia extract (or any other natural sweetener you like!) *You may think 20 drops is a lot, but I like my muffins very sweet in the morning because it satisfies my craving for sweet things later on in the day!!
  • ¼ cup water

What to do!!

  • Grease a microwaveable cup with a drop of olive oil so that your muffin doesn’t stick to the sides once it’s cooked.
  • In a separate cup, whisk the egg, then add the flour and stir to form a thick paste.
  • Add the oats and water (you should now have a gooey mixture which is slightly runny and not too gluggy. If the mixture is too thick and dry, add more water.
  • Add your sweetener and blueberries and stir! You’re now ready to pour this mixture into your microwaveable cup!
  • Microwave on high for 2-3 minutes. Every microwave tends to be different, but just wait for the muffin to rise a bit and become dry on the outside.
  • Transfer muffin onto a small plate and let it cool for a few minutes (it will be VERY hot!!)
  • Cut into 2 halves and serve with light cottage cheese or thick natural yoghurt!

summary; Dan’s Christmas Eve hasn’t quite been going as planned. His parents can’t make it home because they’re stuck in some foreign country, so he has to go up north to his grandparents’ house, all along while missing his girlfriend’s Christmas party extravaganza. Throw a train, two annoying girls, a small town diner, and a cute boy with pale skin and dark hair into the mix and he has himself the weirdest Christmas Eve he’s ever had.

so last year i read the book let it snow (kinkshame me, i’m ready) and there was this story called “The Jubilee Express” and i was like shit that’s so cute, and this year i reread it and i was like “,,,,i’m going to make it gay” so i changed some things but it’s kind of the same storyline so whatever and now here we are, hope you enjoy, friendos.

title by kate ( @glitteringdan) also special thank you to her for beta-ing this and reading it and giving lots of encouragement !!!

(ps this isn’t het dan, though it may seem like it at first, it’s bi dan thankies)

Dan eventually ordered a meal and gave back the menu, sipping his hot chocolate as the employee walked away to get his order ready. He pulled out his phone, checking to see if he had any missed calls from his family or Violet; he didn’t.

As he was putting his phone away, the bell on the door rang, signifying someone had entered. He half-turned, expecting it to be Max or something (because who on Earth would ever go out into that snowstorm) but it wasn’t. It was a person, or at least he thought it was a person, covered head to toe in wet plastic bags from Tesco. They began to strip them off, one by one, soon becoming a big lump of blue coat. They removed the hood from their head, revealing ebony hair that looked similar to Dan’s. They were male, he presumed. The man unzipped his coat and stomped his feet on the welcome mat in front of the door.

‘Had a cake craving…So I made a mini Banana/Blueberry Pudding! (look at how decadent and gooey it is!!)

I really felt like eating something sweet and caloric and comforting…you know those urges you sweet-teeth get? Yep. They’re deadly! Well, instead I made a little microwave muffin! And this time I added some ripe mashed banana to my buckwheat flour, so it turned out very gooey and moist like a hot mini pudding! It was the PERFECT thing for me and was very low in fat!

Serves 1
Calories - roughly 200-300 (it’s quite a decent size)

  • 1 ripe mashed banana
  • 1 heaped tablespoon buckwheat flour/wholemeal flour
  • 1 eggwhite
  • natural sweetener (I used 15 drops Stevia extract)
  • ¼ teaspoon vanilla essence
  • 1 heaped tablespoon frozen blueberries
  • splash of water
  • olive oil

  • Grease a wide microwaveable cup with a tiny bit of olive oil.
  • In a separate cup, mix the remaining ingredients and pour into cup, leaving about 6cm from the rim of the cup (as in, you need room for the pudding to rise!)
  • Microwave on high for 3-4 minutes until it’s finished bubbling on the surface and looks cooked.
  • Carefully remove from microwave and tip onto a little plate (it will be very hot!)

what if baby names were like urls so once one was taken you couldn’t have it, so if you wanted to name your daughter ‘emily’ you would have to add a dash in it or a ‘z’ and then people started naming their kids microwave or muffin.. and then people hoarded baby names for when they have more kids.
