1 cup whipping cream or heavy cream ¼ cup granulated sugar 1 cup Meyer lemon curd (store bought or homemade) Blackberries for garnish (optional)
1. Chill a large mixing bowl and the beaters of an electric mixer (or whisk attachment of a stand mixer) in the refrigerator for about 15 minutes. Remove from the refrigerator and pour the whipping cream into the chilled bowl. Beat on high speed for one minute. Add sugar and continue to beat on high speed until soft peaks form.
2. Gently fold in lemon curd, 1/3 cup at a time, until well blended.
