Keto Chinese Takeout

Super easy “Krab” Rangoon

2 oz - cream cheese
1 - small container REAL crab meat
8 - slices of cheese
Soy sauce
Sriracha (if you’re wild!)

Put all ingredients but cheese slices in bowl and microwave in 30 minute intervals until melted and combined.

Place cheese slices on parchment paper and microwave for 45 seconds until bubbly.

Quickly add a dollop of filling and fold cheese while soft. It will quickly try to shape.

Once cools it is crispy and you can even reheat without cheese melting. Dayum!

Pair with some cauliflower fried rice for a Chinese style meal. Delicious.


Good Morning Sweaty pic! Had an excellent run this morning, I am glad I took the time off last night for rest and relaxation, I crashed out at like 9:30 last night!

I am planning on maybe running again this afternoon to boost my mileage, but I know I need to hammer the gluteus though! We shall see!

There was an awesome sun rise this morning coming over the Oregon Mountains so I thought I would share it to y'all!

Keto Mexican Slaw

This makes a perfect topping to any Mexican dish. I put mine in some cheese shells with shredded chicken thighs.

Super easy!


1 bag of shredded cabbage/coleslaw
4 tbsp of full fat mayo
¼ cup of white vinegar
Chopped cilantro or cilantro paste
Spanish gardens taco seasoning

Whisk together everything except cabbage.

Poor over cabbage slaw and mix well.

Refrigerate for several hours or overnight.



I haven’t been updating, because I haven’t been doing much in the way of dieting or exercising.. but I think I’ve lost a few inches, so I thought I’d show you.
Just to refresh your memory as to how I looked when I started this blog, here’s my before picture again (black undies).. that was me around 242 lbs.
The second photo (grey undies), is me now (around 233 lbs). I have only lost a total of 12 lbs, and I did gain a few of those lbs back before I took the new pics.. but I’ve lost inches for some reason. Could be that I am losing fat but gaining muscle.
I did get back on my hormones (the surplus of estrogen was contributing to my weight gain) and my meds and everything.. and I’ve been taking a multivitamin, and vitamin D supplement.. and eating a shit tonne of protein (and having protein shakes quite often, as per my dietician’s request).
Do you notice much of a difference?

Yeah boy! I’m killing it. I was worried that I might not have a loss because I’ve been keeping the cardio low with my foot still being messed up. Diet actually works. Woo hoo!

Update on the leg pain….it still fucking hurts. This is the worst muscle soreness I’ve had in years. I’m walking around like my wife finally got her wish and introduced me to pegging.

I remember the picture on the left, I was so uncomfortable I Really hated that I had to get my picture taken I felt so out of place.
I just didn’t want to be in front of the camera, now I am still someone who struggles with things like this but I am SO happy not to be where I was.
If you’re in this position please remember this can be done you just need to commit to it day by day, if you can handle one day you got the next!
Trust me you can do it however you choose, just take that one step!

Morning cardio session out of the way! Even after the 5 yesterday my body felt really good this morning! Even with missing a day of running, with that awful stomach flu, I still will make my 60 mile minimum for the month! 😊

I may run again this afternoon before my lifting session or I may just lift! I am really feeling solid lately, I am in a great workout groove.

Solid rowing and arm session this afternoon at the gym! Probably took a little longer than I should have but work has been pretty chill today! On a side note if you want a good workout and have never tried a rower you gotta try it! I sweat like there is no tomorrow on that thing!

Random but for breakfast I made a chili relleno casserole and it was pretty bomb!

Not sure what I am doing this evening but I am sure it will be awesome!

Helmeted Guineafowl (Numida meleagris) are social birds, flocking in large communities. Males dominate the community, chasing each other to settle disputes. After breeding, the male spends a lot of time and energy defending the female so she may forage. Thus, the male will lose weight while the female is gaining it. Sometimes females will lay their eggs in another nest to be incubated. This is fairly common in guineafowl as they don’t begin the incubation period until after they lay their last egg. Incubation lasts 25 to 29 days. Baby guineafowl, called keets, are able to leave the nest immediately after being born. As you can see in the photo, their coloration keeps them pretty well camouflaged from predators.

Low Carb Mexican Lasagna

This came out amazing! It is super easy to make.


Low carb tortillas (I used La Tortilla)
Ground Beef
Cream Cheese
Shredded Mexican Cheese
Freshly sliced tomato
Mexican Seasonings
Cilantro (optional)


I started by tossing a frozen block of ground beef in the slow cooker with Mexican seasonings. I smashed up the ground beef while it cooked for a few hours and then added half a block of cream cheese, then stirred it all up.

Preheat oven to 425 degrees

Once my ground beef and cream cheese mix was ready I sprayed a pan and put down one layer of tortillas.

Cover this with ground beef mix
Top win cheese
Top with sliced tomato
Lightly season
Add another layer of tortillas
Ground beef
Shredded cheese
Final layer of tortillas
Top with shredded cheese

Cook until cheese browns.

Let cool, and it will harden and crisp up.

All of the delicious grease and drippings will soak into the tortillas and add a TON OF FLAVOR!



Good morning! Sweaty selfie for @mystoryfortheaudienceoftheworld!
Had a great run this morning even though I didn’t want to get out of bed! Getting some cardio in really does jump start my day! I need to keep doing it during the week and use my weekend for sleeping in!

I have successfully managed two a day workouts since Tuesday and even had one 3 workout day. I am sore but I am feeling really good, hoping for a good weigh in tomorrow at nutrishop!

Last night I ate leftover pulled pork in a salad for dinner, it was delicious!


Morning sweaty workout pic! My shirt is literally a different color gray before I start running! Haha 😂

I biked for 15 minutes and then jumped on the treadmill and pushed! I wanted to average a 12 minute mile but ended up doing a little better than that, which made me very happy! I know I can do it I just need to push myself to do it!

And lastly I took a nice pic of my drive into the my this morning! It is a beautiful day in the neighborhood!

Always focus on trying to stay healthy and fit. By eating healthy and exercising, you’ll lose weight if it’s healthy. Remember you should be eating at least 1,200 calories if your female and 1,500 calories if you’re male. That would be losing weight but if you’re exercising you should really be eating more.

It’s been a crazy day! Got in a second workout this afternoon but was literally so rushed I forgot to selfie! So you get a driving to get medicine (Holly is sick 😰) while waiting for the awesome cauliflower pizza to cool!

Ok I’m not sure if it is awesome yet but I really wanted pizza and really wanted to eat healthy so… cauliflower pizza it is! Alfredo, mushroom and pepperoni!
