Apple Tart with Honey Dulce de Leche

FILLING INGREDIENTS
2-3 c. peeled, sliced apples (Braeburn, Fuji and/or Rome Beauty)
2-3 T. dulce de leche
2 T. brown sugar
1 T. granulated sugar
3 T. instant ClearJel or 2T cornstarch or 4T flour
1 t. apple cider vinegar
¼ t. vanilla extract
1/8 t. ground cinnamon
1/8 t. nutmeg
pinch salt

CRUST
single pie crust or your choice
egg white
coarse sugar, optional

Line a 7” pie dish with the pie crust leaving at least an inch hanging over, all the way around. Brush with the egg white.

Stir the clearjel into the sugar to prevent clumping. Toss the apples with the filling ingredients. Pile onto the crust. Casually fold in the excess dough to form a rustic crust. Brush the dough with egg white and sprinkle with course sugar. Bake at 350°F until crust is golden and the filling is bubbly, about 45". Cover with foil if browning excessively.

#CHEFTIPS: Toss sliced apples in #honey water to prevent browning, about 2 T. honey to a cup of water.

Grate a 1-inch piece of peeled ginger root. Put it in a pot with 2 cups of cold water, bring to a boil, lower heat, and simmer five minutes. Add ½ teaspoon cayenne pepper (or more or less to taste) and simmer one minute more. Remove from heat. Add 2 tablespoons fresh lemon juice, honey to taste, and 1 or 2 cloves of mashed garlic. Let cool slightly, and strain if you desire.

Then get under the covers and drink as much of it as you like. Hope you feel better.
