Vegan Lentil “Sloppy Joes”

Ingredients:

  • 1 x 420g can of lentils
  • 50 g brown rice
  • 1 medium onion, diced
  • ½ tsp ground cumin
  • ¼ tsp cinnamon
  • 2 tbsp tomato purée
  • 250 g cherry tomatoes, chopped
  • ¼ tsp chilli flakes
  • 2 tsp liquid smoke
  • 1 tsp chipotle Tabasco sauce

Recipe:

  1. First rinse the rice, then add to a saucepan along with the lentils and cover with water. Bring to the boil and then simmer for 25 minutes.
  2. Meanwhile, heat a non-tick frying pan and cook the onion until soft, then add the cumin, cinnamon and tomato purée. Cook for another minute before adding the tomatoes, chilli flakes, liquid smoke and Tabasco.
  3. Finally, add the cooked lentils and brown rice to the pan and cook for a further couple of minutes. Season to taste :)

Notes: I wanted to use up some leftover rice and lentils that I’d made the day before but felt they were a little bland, so I spiced them up a bit and threw them in a wrap with some violife cheese and sour cream :) They were definitely easier to eat in the wrap than the next day in the burger (above). 

Serves 4, 129 calories

Hiya! Was wondering if you could help me - I'm on a special diet and can't eat anything with gluten and/or sugar, as well as artificial preservatives. I've had a look at a lot of vegan/gluten free blogs but most of the recipes are for treats and deserts. Do you have anything that is main/dinner based?

Here are a few recipes and round ups that may be helpful:

If you have/are able to acquire a blender/food processor and fridge/freezer I suggest possibly doing so to make awesome smoothies, milkshakes and soups. You can make burritos, tacos, nachos, salads and more with or without a microwave. Check out Vegan Dorm Room Survival by One Green Planet, Staying Vegan In College by Vegan American Princess and How To Cook Vegan In A Dorm by Food Sense. Learn how to cook pasta in the microwave. Try out raw recipes. Check out this vegan grocery shopping list for a lot of choices that could be beneficial to you. If you’re able to, look out for Amys at the grocery store for microwavable mac and cheese, enchiladas, soups and more (double check to make sure you’re grabbing the vegan meals Amys provides as they do also provide just vegetarian meals; the ingredient list will specify at the beginning if the product is vegan or not). Also, look for Boca as they have chicken nuggets, burgers and more that you can microwave. There are more brands and products that are vegan listed above in some of the articles. Download apps to find vegan food in your area. I hope this helps some! I’ve never actually lived in a dorm/solely with only a microwave for cooking so if anyone else has any advice please feel welcome to comment on or reblog this!
