Ratatouille 💖

Ingredients
2 chinese eggplant - thinly sliced
2 yellow zucchini - thinly sliced
2 green zucchini - thinly sliced
1 cup of sweet baby bell peppers yellow, red, orange -thinly sliced 
12 cloves of finely grated fresh garlic 
1 6oz can of tomato paste
¾ cup water
3 tsp fresh thyme
3 tablespoons olive oil
Salt and pepper to taste

Method

1. Set oven to 375 degrees , lightly brush a rounded pie dish with olive oil

2. Mix garlic, tomato paste, water, salt, pepper and spread on the bottom of the pie dish

3. Arrange first layer of eggplant, yellow zucchini, green zucchini working in a circular pattern, sprinkle half of the sweet peppers, 1 tablespoon of olive oil, 1tsp thyme, salt and pepper

4. Do the same for the second layer and top with the other half of the sweet peppers, 2tsp thyme, 2 tablespoons olive oil, salt and pepper

5. Cover with parchment paper and cook 45- 55 min, uncover last 15 min of cooking time to brown the top.

6.
