Jennie: the mom friend. Will always make sure you got enough food on your plate. Might appear cold sometimes but she lowkey cares a lot for you. Will give you a judging bitch face when you crack lame jokes even though she secretly finds them funny.

Jisoo: dinner dates. So many of them. Any time of the day. “I’m kinda hungry let’s grab some food I heard there’s this new Italian restaurant?” Stare contests that end in weird grimaces. “You don’t think I can eat 50 chicken wings ? OH LEMme show you” -“no jisoo don’t” always protect this smol bean okay.

Rosé: might sing 24/7 when you’re hanging out but you gotta appreciate it okay I mean your ears will probably thank you. Lots of outdoor activities like going to the amusement park or picnicking. Also lots of random jokes that are actually funny.

Lisa: idk but I think of playing mario kart. Or like games in general. Lots of games when being rather at home, enjoying a lazy day with pizza, blankets, pillows and netflix. And mario kart. Deep conversations about life and questions like “are hotdogs sandwiches?”

VEGAN MEAL IDEAS: LUNCH DINNERS & SNACKS

In the morning, I make myself a tofu scramble or peanut tofu.

Then, here are some (vegan) meal ideas for lunch, dinner & snacks

LUNCHES
I always add one of the following proteins (all are vegan) to my buddha bowls:
- Tofu
- Seitan
- Beans
- Lentils
- Chickpeas
- Falafel 
- Tempeh
- TVP

Buddah bowl 1:

Rice, TVP, squash, roasted potatoes, zucchini, roasted red peppers,  white onion (sauce: tahini + soy sauce + hot sauce +  agave)

Buddah bowl 2:

Quinoa, lentils, sweet potato, red peppers, asparagus, garlic  (sauce: peanut butter, vinegar, agave, soy sauce, water)

Buddah bowl 3:

Barley, olives, red onion, corn, eggplant (sauce: hot sauce, almond  milk, tahini)

Buddah bowl 4: 

Rice noodles, mushrooms, zucchini, eggplant, spinach, onion  (sauce: soy, hot sauce, water, tahini)

Pasta salad:

Corn pasta (cool), avocado cubes, red onion, shredded lettuce,  sundried tomatoes, red pepper (sauce: lemon juice, olive oil,  vinegar, agave, chili paste)

Mexican Quinoa:

Quinoa, olive oil, garlic, jalapeño, veggie broth, black beans, tomatoes, corn, chili flakes, cumin, lime, avocado

Falafel dippers:

Chickpeas, onion, garlic, cumin, parsley, basil, chickpea flour, olive oil (sauce: tahini, lemon juice, olive oil, agave, garlic, salt) 

DINNERS

Coconut potato curry:

potatoes, cashews, cherry tomatoes, tomato paste, cayenne pepper, cumin, garam masala, coconut milk, olive oil, basil

Vegan Roasted Red Pepper Pasta:

corn spaghetti, almond milk, shallots, red pepper, garlic,  olive oil, nutritional year, corn starch, pepper flakes

Potato “fries”:

Yellow potatoes, chill flakes, batter, lettuce (dipping sauce: chili  paste, mashed tomato, water)

Mushroom Polenta:

garlic, polenta, vegan butter, vegetable stock, rosemary,  mushrooms)

Vegan Pizza:

dough: gluten free blend, salt, baking powder, sugar  (coconut), yeast, olive oil  toppings: olives, pelati tomato  sauce, basil, red onion, mushrooms, spinach, zucchini 

Rapini Pasta:

Corn pasta, rapini, broccolini, olive oil, lemon juice, chill flakes

Thai curry noodles

Rice noodles, onion, cherry tomatoes, coconut oil, spinach (sauce:  coconut milk, tomatoes, tofu, soy sauce, ginger, red curry paste, sriracha, garlic, salt, lime juice) 

Spicy peanut butter tofu:

Firm tofu, peanut butter, sriracha, garlic, vegetable stock, green onions, rice vinegar, agave, soy sauce

Veggie burger:
Veggie patty, whole wheat bread, lettuce, tomato, mushrooms, avocado, olives (sauce: mustard or ketchup or vegan mayo or hot sauce)

SNACKS/ SIDES

Pistachio-stuffed dates:

pistacchios, salt, dates, shredded coconut 

Greek salad:

black olives, cucumber, tomato, chickpeas, red onion, bell pepper  (sauce: red wine vinegar, olive oil, oregano)

Rice rolls:

Rice paper, lettuce, onion, mushrooms, peppers (dipping sauce:  tahini, hot sauce, water, chili paste, soy sauce)  

Date balls:

Dates, shredded coconut, raw oats

Apple slices with sauce:

Green apple slices, cinnamon (sauce: soaked dates)

Sweet potato chips

Sweet potatoes, salt, vinegar 

Baba Ghanoush

lentils (beluga), eggplants, pomegranate, parsley, tahini, lemon  juice, salt)

About Me

So, I have over 500 followers now (wooo! You guys all rock!!). I figured I might as well tell y'all about me a bit.

I have always been overweight. It’s always bothered me. In high school I kept my weight below 200 by skipping meals and doing marching band. Then I graduated and had my first kiddo. I broke 200 and haven’t been below it since.

Since I was 19 I’ve gained about 40 pounds (so that’s like almost ten years of weight gain). Part of that weight gain has been 5 pregnancies, part of it has been hypothyroidism, the last part is pizza and lazy. But I’m aware that there needed to be a change.

I started watching how much I ate in December 2016… and I still gained about 5 pounds, so I decided to do something I knew worked. I started a Beachbody program and started using the 21 day fix meal plan and Shakeology along with my workouts.

Now 7 weeks after starting that I’m less than half a pound away from a ten pound weight loss.

I’m refusing to use my thyroid and my life as a busy mom of five as a crutch anymore. I turn 30 in July 2018. I want to lose a minimum of 60 pounds by then, but I’m really pushing towards my ultimate goal of 100 pounds being gone forever. :)

TL;DR
I’m a mom of five kids under 8 years old with hypothyroid. I’m only 28 and trying to lose 60-100 pound before my 30th in 2018.

Warm Fuzzy Wednesday

I decided to be lazy and do frozen pizza instead of my original dinner plan because I’m just too tired at this moment. Also, I feel like everyone is going to be expecting some super fun question now because I made it into a whole thing, but ¯\_(ツ)_/¯. Anywho, I’m in a very musical mood this week, for absolutely no reason in particular (lol). 

So, what I wanna know is: did you/do you play an instrument? If you did, what did you play and for how long? Did you love it or hate it? What was your favorite style of music to play (if your instrument was/is versatile)? Is there an instrument you’ve always wanted to play, instead of what you did play or because you never played one? And do you have a favorite composer?
