Roughly grate the zucchini, put in a colander, sprinkle with salt, and leave for two hours. Press the zucchini to drain the remaining water. Add 50 kg feta, roughly grated yellow onion, chopped mint, and bread crumbs. Fold once or twice. Add 2 large eggs. Add more bread crumbs until the mixture attains a sticky, but fairly dry, texture.
Pat the mixture into patties about the size of your palm. Shallow fry in a pan with ¼ inch of olive oil.
