Recipe: Kolokythokeftedes (Greek zucchini fritters)

Kolokythokeftedes (Zucchini Fritters)

  • 1 zucchini
  • 50 g feta
  • yellow onion
  • mint
  • bread crumbs
  • 2 eggs
  • olive oil

Roughly grate the zucchini, put in a colander, sprinkle with salt, and leave for two hours. Press the zucchini to drain the remaining water. Add 50 kg feta, roughly grated yellow onion, chopped mint, and bread crumbs. Fold once or twice. Add 2 large eggs. Add more bread crumbs until the mixture attains a sticky, but fairly dry, texture. 

Pat the mixture into patties about the size of your palm. Shallow fry in a pan with ¼ inch of olive oil. 

My Big Fat GREEK Craving

Howdy folks.  Yes.  I just said howdy.  I am in an EXCELLENT mood.  I just took a midterm, I am done for the week, and I am ready for ze weekend.

Anyway, I’m craving something fried and delicious (SHOCKER).  Luckily, the folks at Closet Cooking have the perfect, mouthwatering, recipe…


Yield: 8 balls.

  • 2 cups zucchini, grated and squeezed
  • ¼ cup of feta, crumbled
  • 1 splash ouzo (optional)
  • 1 clove garlic, chopped
  • 2 green onions, sliced
  • 1 handful herbs (such as mint, dill and parsley), chopped
  • 1 egg, lightly beaten
  • salt and pepper to taste
  • flour (I used whole wheat)
  • breadcrumbs (I use whole wheat)
  • oil for frying
  • Tzaziki for dipping - see below
  1. Mix the zucchini, feta, ouzo, garlic, green onion, herbs and egg and season with salt and pepper.
  2. Mix in enough flour and breadcrumbs that you can work with the mixture to form balls.
  3. Form the mixture into balls and dust in flour.
  4. Fry in oil until golden brown and set aside to cool.


Mix everything and let chill in the fridge for an hour or more to let the flavours mingle:
  • ½ cup Greek yogurt or strained yogurt
  • ½ cup cucumber (peeled, seeded, and shredded, squeezed and drained)
  • 2 cloves garlic (minced)
  • 1 tablespoon chopped fresh dill or mint (optional)
  • 1 tablespoon lemon juice
  • 1 splash ouzo (optional)
  • salt & pepper to taste
