K'thiew (classic Khmer noodle soup)

My mom made k'thiew! I’m probably the only Asian who’s not a fan of this noodle soup. I’ll eat it like once in a blue moon. It’s not something I crave often. But it’s great and filling for this cold season!
This is the Phnom Penh version w/ the usage of pork bones but not exactly alike. Authentic Phnom Penh k'thiew has ground pork and shrimps as meat toppings. But really, you can pick and choose your own toppings! Thinly sliced tender beef is heavenly! There’s another version made from beef bones, which is very similar to Vietnamese beef pho.
One day I shall attempt making it but it’ll be a long time until then.
