Never Sleeping Again: Part 7

*A TRC AU

[Just a note before you begin: the previous parts of this AU were happy/cute/flirty, this part is not. Spoiler/trigger warning: Kavinsky makes an appearance and Ronan has a mild panic attack and things get pretty heavy.]

It was inevitable that Ronan’s good mood would not survive two minutes in the presence of Declan. By the time they reached the small Italian restaurant (the only one in Henrietta) Ronan’s triumphant high had evaporated and he was back to his usual, surly self. He ignored Declan’s lecture on punctuality and proper dress but it was becoming difficult to reign in his temper. In desperation Ronan sent Gansey a brief text begging him to come to lunch and act as a buffer between him and Declan. (Ronan was only attending lunch because Matthew had asked and it was almost impossible to refuse the younger Lynch brother).

The restaurant was what some would describe as quaint: cozy tables with candles in the middle, red check table clothes, Italian music played at a subdued volume, soft lighting, and the pervasive aroma of good food. Natalie, Declan’s latest fling, was waiting for them on the bench in the foyer. Ronan thought she didn’t look like the usual model that Declan went for, she was too small and narrow, her hair was dark brown and short, she wore all black, she had multiple ear piercings. Definitely not the Declan brand. Ronan gave her a brief nod and then pretended she wasn’t there. He scanned the restaurant but didn’t recognize any of the diners. He shifted from foot to foot anxiously waiting for Gansey to arrive and save him from a fate worse than death: watching Declan and Natalie flirt their way through appetizers, salad, entrees, and dessert. Ugh.

This was my lunch!! Pesto pasta (I blended up avocado, kale, spinach, cashews, mint and green peas in my blender for the sauce) 🌻 It tasted good but then I added on some nutritional yeast, basil and cherry tomatoes afterwards and it took it to the next level 😏😏😏 There are few things in this world that can top some bomb vegan pesto pasta 😍

Nice cream from yesterday (it was so hot it started melting before I could take the photo 😩😂 ) Just blend up some frozen banana, mango and plant-based milk and top with whatever you want! I went for passionfruit, kiwi, buckwheat, banana, berries, pumpkin seeds and coconut! 1st of January today ✨✨

Today I went out with my sister to buy Christmas presents for our family (as usual, we are quite late 😅) and I found this nice moleskine notebook. I was looking for one like that in a long time so I bought it and I started drawing a little something (even if it’s a basic recipe, I just wanted to train in a way 😊)

The Best Vegan Chocolate Chip Cookies

- 1 stick vegan margarine
- 1 cup sugar
- ½ cup brown sugar
- ¼ cup smooth soy nut butter
- 3 tablespoons water, 3 tablespoons oil, and 2 teaspoons baking powder (mixed together to sub for 2 eggs)
- 2 cups flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 9 ounces vegan chocolate chips

Roll into balls (about golf ball size) and set on a baking sheet covered in parchment paper. Pop in the oven at 375 degrees for 9 minutes and let cool. Makes about 30 cookies.

These cookies are seriously awesome! They’re soft but with a slight crisp on the outside and they just melt in your mouth 😍 so so good and perfect for the holidays!

Making sweet and sour chicken. I added chickpeas and lots of veggies because I prefer to buy a smaller quantity of expensive, organic free range chicken, instead of a larger amount of cheaper chicken which has been reared less considerately, and bolster the meal with chickpeas to stretch it further. I use skinless chicken thighs here, cut into pieces, which I find really tender and flavourful. The quantities I used here made 8 portions.

1) Sauté chopped celery, onion and carrots and add a little crushed chilli along with crushed root ginger and ginger. I used frozen portion blocks of prepared ginger and garlic here, which turned out to be very good.
2) Once the veggies are slightly softened, add your chopped chicken, a sprinkle of whatever sweetener you prefer (I used Truvia but you could use honey, sugar or indeed nothing, especially if you’re adding dried fruit later on) and a squeeze of tomato purée. I like to add smoked paprika, lemon juice, salt and pepper and dried oregano at this point, as well.
3) Once the chicken has sealed and everything is combined, add two tins of chopped tomatoes and one tin of pineapple chunks. You can add one tin of tomatoes, but I wanted to make a lot of sauce. I also added a large splash of balsamic vinegar to enhance the ‘sour’ element of the dish. Give it all a good stir.
4) Add a tin of drained chickpeas and a few chopped bell peppers. I decided to also add some chopped, unsulphured dried apricots, and would recommend them as they worked very well. Raisins and dates are also nice and make the dish even sweeter. If using dates you really don’t need to add sweetener at the beginning of the recipe, as they are very sweet in themselves.
5) Allow to simmer for as long as it takes for everything to combine and cook through, and for the flavours to meld. I let this simmer for about 30 mins so the sauce thickened nicely.

Serve with brown rice, quinoa or noodles…enjoy!
